Baked Tilapia in Garlic and Olive Oil

This was super! I just added a little cajun spice! Delicious. I had it with some fresh corn on the cob. Will make this again, great base recipe!

The Best Meatballs

These were awesome! I only used ground beef *inadvertently*... put a couple slices of wheat bread in the blender to make crumbs, added italian seasoning and it was very delicious! Served it with Safeway brand marinara sauce (Really good from a jar sauce) and spaghetti noodles. Made 26 meatballs. Can't wait to make again!

Kalua Pig in a Slow Cooker

This is awesome! I cooked my roast for about 20 hours on low in my slow cooker. I was wary of not adding any liquid to the slowcooker but the roast makes it's own wonderful juices! I used to live in Hawaii and this comes close to what they have there. I mixed mine with some sweet onion and cabbage i chopped up and steamed/boiled in a pan for about 5-10 minutes... SO GOOD! Just put it on top of white sticky rice... just like the islands! So ono!

Crispy Chicken Strips

These were so easy to make! We really enjoyed them. I added a bit of fresh cracked black pepper to the crumb mix. Very yummy and much easier to make than other chicken strip recipes I've seen.

Easy Chicken Rice Casserole

This is a very good basic recipe. If you read it, you will see there is not a whole lot of spices listed... which is why some people might think it "bland". Don't be afraid to personalize it! With this in mind, I made this recipe as it was but added 2 cups of frozen brocolli cuts, frozen corn, fresh ground black pepper, thyme, and a few dashes of cayenne pepper. It came out so delicious and moist. Make sure you cover it the first hour... the last 15 mins i sprinkled parm cheese and some italian breadcrumbs on top. My boyfriend and I both loved it.

Tender Flank Steak

This was the best recipe for flank steak I've found yet! I added a little red pepper and a couple drops of sesame seed oil and marinated it for about 6 hours. Then I pan fried it in some of the marinade. It was so tender and delicious! I served it with garlic mashed potatoes and brocolli and my boyfriend was singing my praises. Thanks!!

Slow Cooker Chicken and Dumplings

Yum yum yum! My boyfriend who is picky loved this recipe and already wants me to make it again. I took the advice of the other viewers, and used chx stock instead of water. I also added three stalks celery, a bay leaf, some seasoning salt and a few dashes of thyme and cayenne pepper, along with fresh black cracked pepper. It WAS NOT too salty and came out wonderful! I used a 16 oz can of Safeway brand biscuits, and they were yummy dumplings. I cooked it about 6 hours on high, adding the dumplings at the 5th hour. Comfort food at its best!
