About this Cook
I like vintage-inspired clothes and home decor, and collect midcentury modern furniture and old cameras. My favorite way to spend a day off is to explore small towns for good coffee and used bookstores with my girlfriend. I believe in kindness and compassion in ways big and small, and cooking is becoming increasingly more personal for me. Let's trade recipes!
My favorite things to cook
Tofu scramble, garlic and ginger combinations, cold salads, and modifications on recipes from punk rock cookbooks!
My favorite family cooking traditions
Pierogies!!! (With butter and onions, none of that deep-fried blasphemy.)
My cooking triumphs
My first full vegan/vegetarian Thanksgiving dinner. Fresh rosemary in the potatoes, thick mushroom gravy, steamed green beans. Seconds please!
My cooking tragedies
Whole wheat cranberry muffins... More like dark purple cave stones.

Homemade Black Bean Veggie Burgers
One of the best dishes I made this month! You can substitute or add corn kernels to the burgers for more texture and flavor, but not necessary! Tastes very healthy since I baked them in the oven - no oil! This recipe made 4 good size patties. We ate them all up and I immediately made another batch to have for lunches. I made a chipotle mayo dressing which was exactly the touch it needed! (Some mayo and a dash of ranch dressing in a blender with two or three canned chipotle peppers to taste. GO EASY, they are extremely spicy.)

Vietnamese Tofu Salad
This salad was okay. Not the greatest, but I may make it again some time. What I DID love was the first half of the recipe (ginger, garlic, peanuts and tofu) served hot over rice. I enjoyed that more than finishing the recipe and turning it into a cold salad. Try it! I give the "unfinished" recipe 5 stars!

Baked Tofu Bites
I followed the recipe exactly, and added some fresh ginger. I thought it was delicious! I was skeptical because before cooked, the sauce smells gross and unappetizing. Once cooked, it smells delicious! I served this over rice. When I took it out of the oven, all the sauce had absorbed into the tofu, so it was "dry" but flavorful. I will certainly make this again!
