I am a college student in Alaska studying philosophy. My favorite vacation spot is the Florida Everglades. I have always enjoyed cooking since I was very young, and love trying new recipes.
My favorite things to cook
Things with lots of potatoes and rice--I am a poor college student and love making things that taste great out of good whole foods that I can get on the cheap. If price was no obstacle, I would be baking cookies and brownies every week!
My favorite family cooking traditions
Sourdough pancakes and Corn oysters.
My cooking triumphs
My first apple pie turned out pretty tasty. I also succeeded in making my first casserole more than edible! I made a vegetarian shepherd's pie two years ago for my now husband and he STILL talks about how good it was! BTW, all of these triumphs have been recipes I have gotten off of this site! :)
My cooking tragedies
Macaroons. So yummy, yet so hard to get the consistency right.

Toasted Pumpkin Seeds with Sugar and Spice
Okay, my incarnation of this recipe was a bit of a stretch. We didn't have "pumpkin pie spice"--nor most of the ingredients that comprise it (it is made up of nutmeg, allspice, cinnamon, and ginger). I didn't have nutmeg, or allspice, and my only ginger was fresh. But I didn't let that stop me! I mixed in some cinnamon, paprika, shaved off some fresh ginger and... it was absolutely tasty! So I wouldn't let lack of particular spices stop you from experimenting with this recipe, you can hardly go wrong.

Grandmother's Carrot Casserole
My husband liked this so much I actually made it twice in one week! For the mayonnaise, I used the do it yourself recipe from the "salmon deviled eggs and homemade mayonnaise" recipe on this site. I think that worked extremely well with the sweeter taste of this casserole dish. But I did only use about 1/4 cup of sugar, as suggested by other commenters. Also, it is really great right out of the fridge the next day--even better than when it is first done!

Cowboy Mashed Potatoes
The best mashed potatoes I have ever had! I will definitely make this as much as possible :)
