Tomato, Cucumber and Red Onion Salad with Mint
This is one of my favorite salads to make when I have extra cucumbers and tomatos on hand. I usually only add half the amount of olive oil called for, and it turns out great. I've also made it without mint (when I didn't have any but wanted this salad), and it still tasted great.

Key Lime Cookies I
SOOOO GOOD! This is my husbands favorite cookie that I bake, and I love how it is a "cake-like" texture. I noticed how others didn't like how "doughy" the batter is, but that's what makes this cookie so soft and delicious. I did tweak the recipe a bit by adding a bag of dark chocolate chips. Yum. I also take twice the amount of lime juice the recipe calls for and simmer it on the stove until it reduces to the amount called for in the recipe. This gives it more of a lime zing. Thanks so much for an amazing recipe.

Jay's Signature Pizza Crust
This has now become the pizza crust recipe I use whenever I bake pizza. This recipe is so versatile, because I have used it with different types of flours and herbs with it turning out perfectly each time. I've also used it to make pizza rolls, pizza bread, and pizza pinwheels. When baking pizza with it, I love how this yields a thicker crust since that is what my husband and I prefer! Thanks for an awesome recipe :-)
