White Cheese Chicken Lasagna
About this Cook
I am 24 years old, pretty young to be a good cook but have been cooking with my mom for about 10 years and she is the absolute best cook ever! I like to cook a nice dinner at least 3-4 days a week for my boyfriend and I. I'm not too good at making up my own recipes, but can easily make anything with a recipe and love to use my mom's recipes as she has been making them and perfecting them for years.
My favorite things to cook
I love to cook homemade pastas. I have the best meatloaf recipe, and even my boyfriend loves it and he has always hated meatloaf. I make great dips (spinach, mexican dips, hummus, etc)for parties and games. Love making chicken dishes. Potatoe recipes, twice baked, mashed, garlic mashed, breakfast potatoes, etc. And I love trying new recipes!
My favorite family cooking traditions
My mom has always made the best thanksgiving dinners and I love helping her. Christmas eve she always makes great food and changes it up every year which is always exciting and great. Christmas is always great, my mom makes the best bone in rib roast! For birthdays we get to pick what we want her to make and have a family dinner together.
My cooking triumphs
This past thanksgiving I was unable to make it home. My mom got a binder and wrote all of her thanksgiving recipes and put them in plastic sleaves and mailed it to me. I cooked the entire thanksgiving dinner by myself for by boyfriend and a few friends. Everything turned out perfect. I made the best 21 lb turkey, I bridned it for 24 hours, put a few cans of chicken broth under the turkey with veggies, the entire day I basted it with butter and injected it with the drippings. It was perfect! I was most afraid of how my gravy would turn out and it was perfect! So were the mashed potatoes, sweet potatoes (made with yams), cranberry relish, stuffing and the pumpkin pie. The only thing that wasn't a big hit was the green bean casserole, which next time I will skip and make a different vegtable.
My cooking tragedies
I haven't really had any big tragedies, I would say that my only tradedies would be when I try out a new recipe and it turns out to not taste good. I made a macaroni and cheese dish which did not taste good at all. Oh, and the one mistake I made for the thanksgiving dinner was I didn't realize how long the 21 lb turkey would take so dinner was about an hour and a half late, but everything still came out perfect.

Grilled Peanut Chicken
WOW!!!!!!!!! I seriously have a new favorite chicken recipe! This was beyond delicious! I was out of cayanne pepper so I used chili powder instead. I also don't have a grill so i doubled the recipe then mixed water in and simmered it on the stove. Then poared the extra sauce over the chicken and rice that I made. PERFECT!!! Thank you CHANDRA6 for an amazingly delicious and easy meal!

Boilermaker Tailgate Chili
Absolutely amazing. I made this for a party and everyone loved it and came back for seconds! It is a huge recipe and the pot was scraped clean! I made it exactly as called for the day before, let it sit overnight and then let it simmer again most of the next day before serving. It was perfect, my boyfriend is already begging me to make it again!
