My husband and I both agreed that this pot roast was not as great as the reviews said- it was pretty bland and I even followed other reviews and blanched it first with spices. I will not be making this again.

I followed the recipe almost exactly (I cooked the hens breast side down until there was only 15 min left and I also only used two hens) and it turned out great! My husband has been raving about them and I'm sure I'll be making them again soon. Once I reduced the sauce, it was just enough for the two hens, so if you make 4 be sure to double the wine and broth.

I did this for my monthly book club and everyone LOVED it. I omitted the sugar and used organic blueberry preserves-I also put a small amount of lemon juice on the apples so they wouldn't brown as quickly. It is a bit time consuming, but well worth it!!!
