Yummy Pina Colada Cupcake
Tie dye cheesecake!
About this Cook
I'm a recovering picky eater. I have always had a love/hate relationship with cooking. I find it fascinating...but incredibly stressful! Something about hot burners and beeping timers (not to mention the occasional fire alarm) has always forced me in to panic mode. I decided to learn to cook, once and for all, when I moved in with my boyfriend, Nick. He's encouraging me to be more daring in my culinary adventures. Right now, he's working on getting me to try seafood. I doubt it will happen but I wish him the best of luck. :-)
My favorite things to cook
Anything easy and cheap.
My cooking triumphs
Breakfast! I made the most delicious breakfast ever. Eggs, pancakes, bacon, fried potatoes and everything came out delicious! It was one of the proudest moments of my life...or at least my proudest cooking moment). All of the recipes were found on this website. Well, except for the bacon. I just followed the directions on the back of the package. :-)
My cooking tragedies
My attempts at making peppermint brittle. The first batch wasn't pepperminty enough and I used the wrong chocolate. After acquiring peppermint extract and dark chocolate (for the bottom layer), I decided to try again. However, the warm white chocolate melted the dark chocolate turning it into a marbled ugly mess. Nick came up with the idea to freeze the dark chocolate before applying the white chocolate. It appeared to work well but the layers separated once it was cooled. I completely burned the white chocolate in the next batch and had to throw it away. Finally, after accidentally knocking over the entire bottle of peppermint extract, I decided to give up on the brittle and spent the next two hours cleaning my completely trashed kitchen.

Broccoli Chicken Divan
I have to admit, I didn't think this was going to turn out well. It seemed easy enough so I thought I'd give it a try but it sounded a little dull. I changed my mind after one bite. It is so good. I did cook the chicken with seasoning salt and onion powder for a little more flavor. Other than that, I kept the recipe exactly the same and both my fiance and I thought it was excellent.

BBQ Chicken Pizza
This is an excellent recipe. BBQ chicken pizza was always a favorite of mine at one of our local pizza parlors. Now that I know how easy it is to make I don't ever have to order out again. I used a spicy bbq sauce and skipped the pepperoncinis (but had some on hand for my fiance who thought they were excellent). After having this for dinner once, I made it again less than a week later. Big hit with me and my man! :-)
