Baked Omelet
This was excellent! My boyfriend gave me a high-five! I sauteed the onions with a clove of garlic in butter before adding in. I also added 2 strips of chopped bacon and 2 sauteed sliced zucchini. It was great! Next time, I will try it with bacon, mushroom and parmesan.

Easy Rum Cake
One word: DEVINE. I used what I had on hand: pecans instead of walnuts, butter recipe yellow cake mix, and Captain instead of Meyer's, and it was so easy and so good. I do have a trick when its time to butter and flour the pan: I use real butter and WHITE SUGAR to "flour" the pan instead of flour. This creates a wonderful crispy sweet shiny glaze on the outside of the cake. A neighbor even stopped by to ask what I was baking because it smelled so good! I leveled the bottom of the cake with a knife and poured the glaze onto the exposed part while it was still warm. Leveling off the top makes a more even cake when it's inverted, and the glaze soaks into the cake very well this way.

Addictive Pumpkin Muffins
Great Muffins- they are really good! They're quite filling and pretty low in calories. My roomate who is petrified of diet food would not stop eating them! Changes I made: I used 2 1/2 cups of Spenda for Baking instead of the Sugar I added the cream cheese and streusal topping from the recipie on the "Pumpkin Cream Cheese Muffins" from this website- using Reduced Fat Cream Cheese of course and splenda. Excellent!
