Luscious Lemon Cake

I served this on Easter and no one liked it. I also used the ReaLemon lemon juice, perhaps that was the mistake! The cake was too moist because the icing was absorbed into the cake. It would have been much better to leave the last step off completely.

This recipe was delicious and worth the effort. However, it took a lot more time than I thought. It might be better to prepare it a day ahead and just reheat it in the gravy...it tastes just as good if not better!

Michelle's Roast Chicken

This recipe was really great! I used a 7 lb. chicken and marinated it for 5 hours which wasn't long enough. The flavor was there only mild. I also had to turn down the oven. My chicken looked burnt, even though it was only the onions on top which carmelized. I'll definitely try this recipe again and marinate it overnight. I'll also just bake it the usual way. By the way, the kids loved it!!!

Solianka or Russian Beef Soup

This soup was really good! I served it at a dinner party with a Russian theme and it was a big hit. It makes a very hearty main course. The only recommendation I have is to rehydrate the mushrooms and let the sand settle. Also, you may want to double the recipe and freeze some for future meals!!!

Margarita Cake
