Vietnamese-Style Chicken Curry Soup
Served this to my bookclub gals. They loved it. I made it up a day ahead and the vegetables were a little bit softer than I would like but the flavors were outstanding.

Easy-Bake Risotto
This was a margina risotto for me. The risotto turned out kind of mushy and not enough flavor even though I added dried porcini mushrooms.
