Tuna Garden Casserole
This recipe was amazing! It has now become a new kale favorite. We have an abundance of kale in our garden right now and we will be making this again for sure. I followed the recipe closely and I found that the cooking times for the veggies were too long. I used Campbells Gardennay's Leek and potato soup and some homemade veggie stock. It turned out beautifully. For the next time I might broil the dish for a few minutes to brown the cheese a bit. It might be good with a combination of mozzarella and cheddar or some parm. Yummy, yummy, yummy!

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette
This salad was a big hit. I had forgotten the Gorgonzola at home so I used some feta that my friend had in the fridge. I made a double batch of the salad and they were scraping the bowl. I agree with some of the reviews that the dressing was a bit on the bland side, but with all the flavours of the salad you hardly noticed. The red onions and walnuts are truly the star of this salad.

Kale Puttanesca
The entire family enjoyed this dish. I have to admit that I have never had puttanesca before so I have nothing to compare this too, but I would have liked it to have more sauce. I had doubled the tomatoes called for in the recipe, but it was still not enough for me. It was a great use for kale and I will absolutely make this again.
