Coconut Rice with Black Beans

Maria's Paella

Have made this twice now with great results. Definately wait until the final step before adding your seafood. The shrimp, clams, scallops, etc only need to simmer for about 10 minutes. I used half chicken broth and half water instead of all water. I also use Mexican Saffron, which is much cheaper, but you need to double or triple the amount to get the right flavor. Finally, I added sausage both times and it really adds another dimension. I used mild Italian sausage the first time and kielbasa the second. Both were really good. I did use chicken thighs both times, but boneless breast would honestly be easier.

Cheesecake Cookie Cups

I made these as bars to take to a party. I prepared regular Tollhouse cookie dough (double batch) and spread in the bottom of a large jelly roll pan and baked for 7 minutes at 375. Then I topped with the cheescake mixture (3- 8oz packages worth) and baked for another 15 minutes at 325. I cooled overnight then drizzed chocolate over the top and cut into bars. I topped them each with a raspberry dipped in a Karo syrup so they "stick." They were a huge hit at the party.

Pasta Lasagna

I make this all of the time with 1/2 lb of ground beef and 1/2 lb of Italian sausage. I always mix the penne into the ricotta mixture which keeps the pasta soft. Easy and pretty quick to make.

Rosemary Ranch Chicken Kabobs

Excellent marinade for both chicken and veggies. We just cooked the breasts whole and then ate the veggies on the side rather than skewering all of it (saves time). We did red peppers, purple onions and cherry tomatoes but the tomatoes got mushy. Maybe squash next time?

Fresh Fruit Cobbler

Outstanding! I've made this twice. Both times with rave reviews. I just used fresh pears and blueberries the first time and added fresh peaches the second time. They were both great. No need to double the batter. Even though it doesn't completely cover the fruit, it is not needed. This is really a light, fresh dessert. Thanks for the post!

Zesty Slow Cooker Chicken Barbecue

Tasty, easy bbq chicken. I've made this twice and and it came out great both times. I only cook it for about 4 hours so that the chicken doesn't dry out. I shred it after about 3 hours and then serve over baked potatoes. Serve with sour cream, shredded cheese, diced onions, etc.

Toasted Apple-Pecan Brie Sandwiches

Very yummy! I added some sliced grilled chicken breast to make it more of a meal. After I lightly toasted the sourdough bread, I added 3 slices of brie, then the chicken then the cinnamon apples/pecans and popped it in the oven for a few minutes. Kids and hubby all loved it.

Fish Tacos

My husband loved these! I cut the cayenne pepper in half so they wouldn't be too spicy for the kids and I also served the jalapenos on the side. They were perfect. 5 of us ate the 8 servings.

Berry Cheesecake Parfaits

I've made this 3 or 4 times now and it is always a hit. I double the recipe using 2 of the larger boxes of vanilla pudding (5 oz each, I think) and a lot more Nilla wafers than called for. I've tried mixing different fruits and I think the blueberry/raspberry combo is the best.

Kickin' London Broil with Bleu Cheese Butter

Sooo Good! I got rave reviews of these over the holidays. I followed the recipe exactly and then drizzled melted chocolate over the top and everyone loved them. Definitely use parchment paper on your pans or these will stick.

Brie Cranberry and Chicken Pizza

I love brie so I figured I'd like this and I did. I don't recommend a Boboli crust though- too "doughy." I think I'll try something more crisp next time. I used whole cranberry sauce and didn't get a soggy dough at all. I also cooked my chicken in olive oil with salt & pepper and garlic. Hubby and I really liked it!

To Die For Blueberry Muffins
