Holiday Brie en Croute

Reviewed: Nov. 25, 2009
My favorite appetizer for the holidays. Everyone loves it. Made exactly as the recipe states. I will try to serve with sliced apples this year. Thanks for the idea!

Fresh Fruit Cobbler

Reviewed: Nov. 25, 2009
Outstanding! I've made this twice. Both times with rave reviews. I just used fresh pears and blueberries the first time and added fresh peaches the second time. They were both great. No need to double the batter. Even though it doesn't completely cover the fruit, it is not needed. This is really a light, fresh dessert. Thanks for the post!

Zesty Slow Cooker Chicken Barbecue

Reviewed: Nov. 25, 2009
Tasty, easy bbq chicken. I've made this twice and and it came out great both times. I only cook it for about 4 hours so that the chicken doesn't dry out. I shred it after about 3 hours and then serve over baked potatoes. Serve with sour cream, shredded cheese, diced onions, etc.

Slow Cooker Chicken and Dumplings

Decent flavor but the dumplings were doughy. Won't make it again.

Toasted Apple-Pecan Brie Sandwiches

Reviewed: Oct. 28, 2009
Very yummy! I added some sliced grilled chicken breast to make it more of a meal. After I lightly toasted the sourdough bread, I added 3 slices of brie, then the chicken then the cinnamon apples/pecans and popped it in the oven for a few minutes. Kids and hubby all loved it.

Fish Tacos

Reviewed: Jul. 21, 2009
My husband loved these! I cut the cayenne pepper in half so they wouldn't be too spicy for the kids and I also served the jalapenos on the side. They were perfect. 5 of us ate the 8 servings.

Berry Cheesecake Parfaits

Reviewed: Jun. 30, 2009
I've made this 3 or 4 times now and it is always a hit. I double the recipe using 2 of the larger boxes of vanilla pudding (5 oz each, I think) and a lot more Nilla wafers than called for. I've tried mixing different fruits and I think the blueberry/raspberry combo is the best.

White Chocolate Raspberry Cheesecake

I doubled the Oreos for the crust, doubled the raspberry jam and doubled the white choc chips too. Really rich and yummy!

Kickin' London Broil with Bleu Cheese Butter

Reviewed: May 2, 2009
I'm just rating the bleu cheese butter because I used a different marinade for the meat. The butter was excellent! It really made the meal.

Coconut Macaroons III

Sooo Good! I got rave reviews of these over the holidays. I followed the recipe exactly and then drizzled melted chocolate over the top and everyone loved them. Definitely use parchment paper on your pans or these will stick.

Brie Cranberry and Chicken Pizza

Reviewed: Jan. 31, 2009
I love brie so I figured I'd like this and I did. I don't recommend a Boboli crust though- too "doughy." I think I'll try something more crisp next time. I used whole cranberry sauce and didn't get a soggy dough at all. I also cooked my chicken in olive oil with salt & pepper and garlic. Hubby and I really liked it!

To Die For Blueberry Muffins

I increased the blueberries by 1/2 cup and didn't use muffin liners- just sprayed the pan with Pam. They came out easily and were delicious!

Super good potatoes and much easier to make ahead of time than right before the meal. Thanks for the Thanksgiving timesaver!

Sweet Potato Oranges

Reviewed: Dec. 2, 2008
Soooo good, but darn sweet! I cut the oranges in half, juiced them and cleaned out the insides then stored them in the fridge overnight. It made Thanksgiving day prep much easier! I followed this recipe exactly and everyone loved them, but I think I will cut the sugar in half next time. I also forgot to put water in the bottom of the casserole dish, but it didn't make any difference. Thanks for the fun holiday recipe!

Home Style Macaroni and Cheese

Reviewed: Dec. 2, 2008
Really good- we all had seconds! I used 2 cups of sharp cheddar, 1 cup mozzarella and 8 oz cream cheese with a full pound of macaroni pasta. The proportions were just right. I only needed 1/2 cup of breadcrumbs for the topping. Don't skip the topping- the extra "crunch" made a big difference!

Burrito Pie

Reviewed: Nov. 27, 2008
The ingredients were enough to make 2 9" pie pans; 1 to eat now and 1 to freeze for later. I used Pace chunky salsa instead of the taco sauce and I also added taco seasoning to the meat. I think I made my layers too thick because I could only fit 2 layers of the meat/cheese so go easy on your meat filling if you want more tortilla layers.

Slow Cooker Chicken Stroganoff

This was really easy to make and pretty good too. The sauce was a bit thick for my taste so I think I'll throw in some chicken stock or wine next time.
