The kids are all winding down for the night.    I took the tired, coward’s way out tonight and bought lunchables.    I know, I know…I can make my own and save a ton of money, and there will be those in cyberland who think I ought to do better for my kids.  Of course yo MORE

About this Cook
I'm 31 and a single Mom who's working full time and going to school. Kids and church are my passion, followed by gardening and cooking!
My favorite things to cook
Speghetti sauce, fish, salads, experimenting with fennel pollen, fritatas, shepherd's pie.
My favorite family cooking traditions
Sugar cookies at EVERY holiday using my Mother's tried and true recipe! Monte Christo's on New Year's, and Chicken Cordon Bleu every time my brother comes to visit.
My cooking triumphs
I make a mean quiche! Speghetti sauce I think I have down pretty well, although I'm always looking for better recipes.
My cooking tragedies
Oh Lord, in my early 20's when I was just starting to cook...thinking it was a good idea to make new recipes before company came over. Makes me wince just thinking about some of those night's full of very polite company who said, 'No, no, honey...this tastes...fine...'

Arroz Rojo
I paired this recipe with sour cream enchiladas...and it was marvelous. It was nice and tomato-y, a nice contrast of flavors with the enchiladas. I doubled the recipe and only used 1 tsp of the chili powder, and upon discovery I only had ONE can of tomato sauce I ended up using tomato soup as a substitute! It turned out awesome, and my kiddos really liked it...and that's saying something, seeing as how they're all ages between 5 and 9! :)
