Plum Blueberry Upside Down Cake

Delicious, moist, nice texture. Sweetness of the cake offsets tartness of plums. Made exactly according to recipe except no blueberries. Half of the plums stuck to the pan, but the cake still looked good.

Downeast Maine Pumpkin Bread

Delicious. Used 1/2 cup oil, 1/2 cup applesauce, 2 cups canned pumpkin (from larger can), only 2 cups sugar, and several handfuls of walnut halves. I greased the pans and used waxed paper cut to the size of the bottom of the pan - came out neatly. UPDATE 2 weeks later: I've made this three times now, once with not so much pumpkin (ran out) and extra applesauce to make up the difference - turned out well. I'll use only 1/4 t. cloves next time.

Connie's Zucchini 'Crab' Cakes

What a good way to use a lot of zucchini! I substitute plain oats for the seasoned bread crumbs, double the seasoning, and fry on a non-stick griddle. I use the butter on the griddle rather than in the batter. Good variations: 1) add semi-mashed pinto beans, 2) substitute 1 T. sugar and 1 t. cinnamon for the recipe seasoning.

California Grilled Veggie Sandwich

Very good, attractive sandwich. I've made this several times, grilled the vegetables on a countertop contact grill. It's delicious as written with the feta cheese, also good substituting sharp cheddar. My favorite is cream cheese sprinkled with just a little cayenne (takes the place of the mayo dressing and the feta cheese).

Mom's Zucchini Bread

Good recipe - turned out well even with my adjustments. Used 3 cups zucchini and half whole-wheat flour. Used about 1/4 cup light olive oil and a little more than 3/4 cup pureed stewed prunes instead of the one cup oil. Used parchment paper and buttered bottom of three 7x3 pans. Baked for about 50 minutes. I plan to make this again tomorrow.

Simple and good. Needed the full container (1.5 quarts) of ice cream. Used the recipe for 'Graham Cracker Crust I'. Fun to decorate with melted chocolate chips.

Old Fashioned Rice Pudding

OK. Too sweet, too many raisins (never thought I'd say that). I used leftover brown rice, baked for two hours before a butter knife inserted came out clean. I'll try a different recipe next time.

Dressing is very good with 1/2 t. sea salt, but I suppose this addition is personal taste. I think I'll use a little less oil next time. Toasted almonds add a nice crunch.

Pretty good. I think I'd prefer it as little patties. For the 'mixed spice' I used a combination of cinnamon, nutmeg, allspice, cloves, ginger, coriander, caraway, and cayenne.

I trimmed the tops, drizzled olive oil, and baked at 350 degrees for 40 minutes. The two lighter bulbs (see photo) were baked face up, darker ones upside down.

Delicious Black Bean Burritos

Tasty, easy, and filling. Instead of jalapeno I served canned green chiles on the side. Made them again using pinto beans and less cream cheese - a very flexible, useful recipe.
