Empanadas
These will make a great addition to my recipe box. These were so easy and didn't take long at all. I had left over pulled pork and just added the spices called for, put it in the oven for about 20 minutes and I was good to go. I found the dough to be a little dry. I used Crisco instead of lard and that could account for it. Served with Salsa and sour cream it made a nice change of pace. I will definitely make these again.

Rugelach
Super easy recipe, I brushed the dough with Apricot jam before sprinkling on nuts and raisins. I couldn't keep the tray filled fast enough. I baked half for Christmas eve and put the other half in the freezer for New Years.

Coconut Macaroons German Style
I love this recipe! It is so easy and quick. I have a spritz recipe that calls for 3 egg yolks. No unused egg yolks. Next time I won't toast the coconut quite as much. I used Almond flavoring. The coconut lovers in my family love these.
