Roast Pork with Maple and Mustard Glaze
Pork turned out very tasty and was a hit with my family. I did make a couple changes: 1) Left in the oven for an additional 30 minutes 2) Used regular yellow mustard (didn't have dijon available The dish turned out fine and everyone in my family enjoyed. One change I'll try in the future is to seer the pork prior to putting in the oven to have an even juicier cut.
