Four Cheese Macaroni

EXCELLENT! I used all sharp cheddar rather than regular cheddar and sharp. I made a cheese sauce by heating up the half and half and melting the cheese into it. After I made the cheese sauce, I tempered the eggs into it (in the egg bowl, I slowly added a little of the hot mixture at a time, acclimating the eggs to the heat so that they wouldn't scramble). I put the noodles in the baking dish and mixed in the cheese sauce. Since I made this the night before Thanksgiving, I put it in the fridge and the next day, I took it out and let it get to room temperature, added some more cheese on top as a crust and baked as directed. EVERYONE raved about it and I think we found our new mac and cheese recipe!

Slow Cooker Buffalo Chicken Sandwiches

DELICIOUS! It was done after 6 hours, very tender. We put them in a whole wheat pita and put blue cheese dressing on it and it was so good! Will definitely make again.

Beezie's Black Bean Soup

I was really torn on how to rate this. I followed the recipe exactly except for not using rice and I added a small amount of turkey ham. I should have listened to one of the most helpful reviews that said something about if you add tomatoes/acid to beans before they are cooked,they won't get tender. I had this on for almost 9 hours and the beans were still not soft enough. The FLAVORS were good, and I will make this again, but I won't add the vinegar or the tomatoes until the end. Made that way, I am sure this would be a hit.

Baked Spaghetti Squash Lasagna Style

This was excellent. My squash must have been huge because it took over an hour to cook. This was actually easy to make, I used a jar of Ragu instead of making the sauce. I did add a sauteed onion, 1-2 Tbls minced garlic, 1/2 tsp of basil and 1/2 tsp italian seasoning to the sauce. I only used about 1/4 c of parmesan cheese and that seemed plenty. It was delicious and filling and made about 6 servings.

Homemade Black Bean Veggie Burgers

We've made these three times now and they are a hit. The first time, I tried to fry them and they just fell apart. 2nd and 3rd time, I've baked them. I made sure and pressed the water out of the veggies through a sieve and I think that helped hold them together. After formed, I put the patties in the freezer for about 10 minutes to firm up. Once baked, we put them on whole wheat buns with avocado, pepper jack cheese, lettuce and tomato.

Zucchini Alfredo

This was pretty good with potential to be great. I used less oil (2 Tbls olive oil), more garlic (4 cloves), lowfat cream cheese and milk. There wasn't enough sauce as written, so next time I will double the sauce and add about 1/2 c parmesan cheese into the sauce rather than shaking it over my plate. This dish tastes healthy and the portions are not huge, which is exactly what I wanted. I will try this again.

Fettuccini Carbonara

This was really good. I used less oil and turkey bacon. I didn't have shallots, so I left that out. I doubled the sauce and I'm really glad I did because it wouldn't have been enough had I just made it as written, it was almost not enough sauce doubled. I will make this again.

World's Best Lasagna

This was really delicious. I used ground turkey and turkey italian sausage to cut down on the grease and calories. I didn't have any fennel seeds, so left those out. I didn't get " Arrange 6 noodles lengthwise over meat sauce"...in a 9x13 pan, only 3 noodles lengthwise fit, so that is what I did. The sauce was very good and worth making. The only thing is that it calls for way too much salt, I only used 1 tsp + 1/4 tsp and that was even too much, I think due to all the parmesan. This very well may be the best lasagna I've ever made, I thought Alysia's Basic Meat Lasagna was the best, but I think this is better.

Chili Dog Casserole II

This was really yummy! The only thing I did different was that I forgot to cover it with foil, it still came out great. It was super easy to make, the whole thing from start to finish was on the table in about 35 mins. I used Stagg turkey chili and chicken hot dogs, and lowfat cheese.

Sausage Smothered in Red Cabbage

This was so good! I only used about 1/2-1 tsp of salt, I used turkey sausage and olive oil instead of butter. I sliced my sausage into 1/2" slices. Make sure and use a firm, cooking apple...preferably on the tart side. I will definitely make this again!

Salsa Chicken Rice Casserole

This was really good. We made a few changes: we used brown rice instead of white, only 3 chicken breasts, and about a cup or two less cheese than called for. We also used healthy request (lowfat/reduced sodium) soups and sauteed our onion before adding to casserole. We also added a little taco seasoning. It came out really good.

Best Brownies

These were delicious. I gently beat the eggs before adding, and I combined all the dry ingredients in a bowl (besides the sugar) and mixed them before adding them to the butter mixture. I also added some peanut butter and chocolate chips to the brownies. I doubled the recipe and put it in a 8x12 baking dish, this made thick brownies. They were done in 45 minutes. I wouldn't say that they were gooey, they were a little cake-like but not that much. I will definitely make these again.

Avocado and Cilantro Soup

This was pretty good and refreshing. My husband made it last night. He made a few changes: only used 2 cups of chicken broth (reduced sodium, which was plenty salty), no tomato paste, juice of a whole lime, no tequila, 1/4 c of chopped cilantro. It was a nice thing to "blend" on a hot day. The next time, I would use 3 cups of chicken broth as when we reduced it, it was too thick (and I didn't count this against the recipe when I rated it!).

Salmon Cakes II

These were great and easy to make. Like someone else, I used 10 Ritz crackers instead of the breadcrumbs (and I'd use a little more the next time because my patties had a hard time staying together). I put the onion in the food processor and processed it to death and added the crackers to break them up. I fried my patties in about 1 1/2 Tbls butter + 2 Tbls olive oil. I took the suggestion of someone else and made a dipping sauce: 1/3 c lowfat mayo, 1-2 Tbls coarse ground dijon mustard, 1/8 tsp garlic powder, 1/8 tsp cayenne pepper. It was all very delicious (and I'm not one for canned fish) and I will make it again.
