Italian Sausage Soup
Excellent soup as is, although my family did not care for it as much as I did. I will add barley to it next time to make it even heartier.

Tasty Lentil Tacos
My son said this was the first vegetarian meal he came away satisfied with. That was because he ate at least 5 tacos - and so did his father. Make sure to fry up some corn tortillas fresh before eating. I used Monterey Jack cheese because that is what I had on hand and it was great.

Southwestern Egg Casserole
Served this yesterday for Christmas breakfast and everyone raved. I substituted sharp cheddar cheese for the Monteray Jack, and added chopped scallions. I have just emailed the recipe to my guests, who all requested it.
