Mexican Chicken Corn Chowder
This goes over very well. I make it for my family and my office. I do change it up a little: instead of chicken buillon & water, I add 1can low sodium chicken broth, 4 c. half & half, 1 sm. bag frozen corn, 4 sm. red potatoes peeled & chopped, and 1 can rotelle tomatoes (drained) instead of tomatoes & green chiles then top with the cilantro and a dallop of sour cream. Wonderful with chips.
