Easy Apple Cinnamon Muffins

These came out delicious and my house smelling wonderful. I doubled the recipe and made 3 dozen "normal" sized muffins. I cut the butter amount in half for the crumble topping and just melted the butter before mixing with the other topping ingredients instead of cutting it in.

Cinnamon Apple Syrup

This really did not turn out "syrupy". I let it cook for 15-20 min in hopes that more water would boil off to form a syrup. It never did. If I make this again, I'll just skip adding extra water because enough water is drawn out of the apples by the sugar. The apples were very good though - I cut down on cinnamon and added a bit of nutmeg.

Creamy Pesto Chicken and Bow Ties

A good twist on pasta. I used about 1 c. of pesto and added some frozen spinach I had on hand. Then I topped it with some Parmesan cheese just before serving.

Lasagna Alfredo Roll Ups

Pretty good recipe and not as difficult as I thought it'd be. I cooked the frozen spinach in the microwave and added a can of mushrooms & 1/2 lb. cooked ground beef that I had. I used a 9x13 pan and made 8 large rolls. The filling was not quite salty enough for me. Otherwise it was good!

Fluffy Peanut Butter Frosting

Pasta with Tomato Cream Sauce

I modified this recipe a bit. I didn't have nutmeg on hand so I omited that. I threw in some frozen veggies (peas & zucchini), meatballs, & mushrooms to get a balanced meal. The sauce was a little bland for me so I added a little bit of salt. There is definately enough sauce for 12-16 oz of pasta.

I tried someone's suggestion to use half-and-half instead of cream and the sauce came out much too thin. Perhaps I'll try it with the cream next time.

Brownie Mallow Bars

These are incredibly good! A friend of mine in college used to make these frequently. I only had large marshmallows on hand, so I used those and just cut them into quarters using kitchen scissors.

Pumpkin Gingerbread

This is a great recipe! I used pumpkin pie spice and used about 5 tsp and then added 1 tsp cloves and another tsp of ginger. Because I was making it with Splenda, the bread was done in about an hour at 325. I drizzled melted cream cheese frosting on it. It was delicious the next day, warmed slightly in the microwave.

Best Big, Fat, Chewy Chocolate Chip Cookie

I only had light brown sugar on hand so mine didn't turn out as brown as I'd like. I also didn't like how the first batch turned out when I made them big, so the second batch I made them regular-sized which I liked better. The smaller cookies were still soft the next day - just put them in an air-tight container. I like the dough taste, though and next time I'll try it again with dark brown sugar.
