About this Cook
I'm a busy mom to six children: my four and my fiance's two. I work as a home health nurse and since I'm so busy, cooking and baking is my easily justifiable hobby...hey, we've got to eat!
My favorite things to cook
Baking tops my list. I love to make muffins, biscuits, pancakes or sweetbreads on the weekends when our kids are with us. When Thanksgiving rolls around I relish making homemade pies complete with homemade crust. When I have extra time I love to make from scratch cakes, cheesecake, tiramisu and cookies. I also love to make soup, crockpot meals and pasta dishes.
My favorite family cooking traditions
When I was growing up my mom always made a pot of homemade soup every week once weather got cool and I've carried that on with my family as well. Nothing says comfort food or fall to me like a bowl of steaming soup. I also learned how to bake from my mom...my grandmother shared her love of baking with my mom who in turn shared it with me...now I try to share that with my own children.
My cooking triumphs
I made a 3 tiered wedding cake covered with rolled fondant in sweltering August heat with no air conditioning! It came out beautifully but I never got a photo and lost track of the bride and groom shortly after they married. But every Thanksgiving is a triumph to me...I cook for at least a dozen people and make everything from scratch.
My cooking tragedies
When I was married the first time I had many tragedies. I had an oven with a self timer and one Sunday I put a leg of lamb in to cook while I was at church. We were having my grandparents over for dinner that day and I saw them very infrequently. My grandmother is also an Italian that cooks amazingly well so the pressure was on. Of course, when I got home I found that the self timer never kicked in and the lamb was raw. To make matters worse, this happened AGAIN a few months later with another elderly woman that I admired as well. Needless to say,, I don't use self timers anymore!

Ratatouille
Amazing. I can't wait to make this again! My six kids gobbled it up, even my eldest daughter who does not like veggies in any form! The only thing I did differently was to use canned tomatoes, saved the juice and mixed a bt of cooking wine with it and added about a 1/2-3/4 cup on the layers. YUMMY! We watched the movie after eating it and the kids were delighted that they got to feast on the real thing!

French Toast Casserole
Fantastic! I have made this many times over the past year and it's been a hit every time. It's baking in the oven as I type this...and boy does it smell good! I usually save the bread ends that my kids won't eat and pop them in the freezer, when I have enough I use them to make this. The only thing I did differently (and not on purpose) was that I doubled the recipe but only used 2 TB sugar in the egg/milk mixture thereby ending up with more sugar for the topping. It makes it even tastier, in my opinion. Thanks so much, I'll be making this for years to come!

Mom's Coleslaw
I have been using this recipe for years after first finding it in a Quick Cooking magazine. Much easier to use two bags of prepackaged coleslaw mix to the dressing (or if you don't have a big family like I do, just halve the dressing and use one bag!). I always use Splenda when I make this and it's delish. I most recently prepared this when making the North Carolina pulled pork recipe from this site...piled it right on top of the pork sandwich...yummy! My husband never liked coleslaw until he tasted this and now he loves it!
