Chocolate Fudge Cookies
I am not a baker much more a cook. Nothing I ever bake turns out right. These cookies are fantastic!! I don't use all the oil usually 1/3 cup is fine. I have made these added a little mint extract to them before. I've also done similar ones with lemon cake mix and a peanut butter version. I work with mostly men and have made bags of them to bring to work. They are gone so fast I could barely get one to go with my coffee. Even my boss stole the rest of the bag to keep in his office.

Grilled Lemon Chicken
I made this for passover so I made about 48 chicken breast. Everybody loved it! I don't have a grill and wasn't about to cook it in the oven it would have taken forever so I cooked them on my electric griddle the color was beautiful and the chicken was so juicy. I marinated them for about 4 hours. Also I added some Italian herbs to the marinade and reserved some of the liquid and brushed the chicken as I was cooking it. My neighbors came by while I was cooking saying they could smell it down the block and had to come by for a taste.

Burrito Pie
I changed a couple things around but followed the basic rules of the recipe which I'm sure would be great without my changes. I used 1lb of ground turkey in addition to the lb of ground beef, a verde taco sauce. I like to sauté my onions until they are almost translucent and then add the meat. Then I didn't add the cheese until the end and I put it on top. Next time I will add more green chili's I really like the flavor. Also spray the bottom of your pan place tortilla then put refried bean (98% fat free) then meat mixture and continued to top where I placed the cheese. I was able to save calories and it was still just as delicious.
