Tacos in Pasta Shells

Yum! this was good. my only complaint is that I wished that I had more sauce. I used half an ortega bottle under the pasta and half on top. Next time I'll buy 2 bottles i think. Really serves 3 people.

Apple Crisp III

I'd give this a 5 for simplicity and taste but I had to make a few minor changes, so it's a 4. I used 1/2 white sugar and 1/2 brown sugar and I added 1/2 tsp. of vanilla to the sugar & butter mixture. The only thing I'd chnage for next time is I'd use l/2 cup water instead of 1/2 cup. The apples turned out a little too mushy.

Best Big, Fat, Chewy Chocolate Chip Cookie

these are good but not best. I slightly overcooked some of them and those ended up tasting pretty dry and cakey. the rest I cooked for the correct amount of time and they were better. I think I'd like them a bit more moist, though.

Chantal's New York Cheesecake

so so so so good! and pretty easy to make. next time I'll use a cup of sour cream instead of 3/4 cup (just for personal taste). And my crust came out a tad soft... not sure if that's because water seeped in from the water bath or because of the filling. I may bake the crust for a little while in the over prior to adding the filling next time.

Easy Pizza Sauce III

this was perfect! super easy to make and turned out delicious. I followed others' suggestions and added 1/2 a tsp. of dried basil, 1/2 a tsp. of onion powder and 1/4 tsp. sugar. This did make a LOT of sauce. Way more than we needed for a 12 inch pizza. Next time I will use a smaller can of tomato sauce and cut the recipe in half.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

I thought this was delicious and so easy to make! I overcooked the pork, though, so next time I will either use chicken or be a little more careful. The sauce was awesome! Especially with the feta. I had fresh basil and some farmer's market tomatoes, so I used those. Served with a fresh salad and an orzo pasta salad.

Greek Honey Cake

Zucchini Herb Casserole

I thought this was really delicious and easy to make! Followed other people's suggestions and increased the amount of rice to 1/2 cup and cooked it with a little boullion. Added half a red pepper and used grape tomatoes. I also tripled the minced garlic and doubled the oregano, basil and paprika. Lastly, I mixed one cup of cheese into the casserole and then sprinkled a couple handfuls on top. Really yummy!

Firecracker Grilled Alaska Salmon

Great recipe! A lot of different flavors, some heat, a little tangy, a little sweet. I might try cutting the sauce with some water next time because it was a little thick. Maybe slightly less balsamic ving.

Sicilian Lemon Chicken with Raisin-Tomato Sauce

This was SO YUMMY and healthy and easy to make. I took others' advice and did not drain the tomatoes. I'm glad I didn't, the dish could have used a tad more juice. Next time I might try to add a touch of white wine. I also left out the olives and seasoned the chicken with seasoning salt and pepper. I will definitely make this again soon! Would be a great meal to serve when guests are over for dinner.

Bacon Wrapped Dates Stuffed with Blue Cheese

Delicious! I think 1/2 a slice of bacon for each date is too much, though. Next time I'll only use enough bacon to circle the date once. I tried with blue cheese in the inside and with almonds on the inside. I liked the blue cheese better but both were good.

I used gin and served with watercrackers. Everyone loved it! I only made half the recipe and it was plenty. I may try it sans butter and with more cream cheese next time... just because it seems healthier that way!

Cranberry Chicken I

Chicken Tortilla Soup I

This was delicious! I took it to a dinner party and got a ton of compliments. Everyone asked for the recipe. I made the following changes according to other user suggestions... 4 cloves of minced garlic instead of 3... cumin instead of oregano... 2 cans of chicken broth plus one chicken boullion cube instead of condensed broth & water... a full can of corn and no hominy. I also added some black pepper, cayenne pepper & a tsp. of brown sugar. Definitely include all the toppings, they really make it spectacular!

Peanut Butter Cup Cookies II

Delicious! I used 2 tsp. vanilla, 3/4 tsp. baking soda and no salt. Adding more vanilla offsets some of the peanut flavor. Definitely need a mini muffin baking pan for this one. With a regular sized muffin baking pan, the cookies are too big for the miniature peanut butter cups. Of course, you could always buy the regular size peanut butter cups instead!
