Zucchini Muffins
These are very plain. I doubled the honey and added 1/2 teaspoon nutmeg and they are still plain. Not bad tasting at all just not as flavorful as I would like. I also used applesauce instead of oil and organic lactose free skim milk. Maybe next time more spices???

Jazzy Green Bean Casserole
This is a wonderful side dish. I followed the suggestions of "pinewood" and added about 1/2 pound of cooked crumpled bacon. I also sauteed about 1/2 cup of minced onion and 4 cloves of garlic instead of the dried stuff. I also added a jalepeno pepper seeded and finely chopped to give it a little spice since I did not have any spicy cheese. My whole family loved it. We will make this again!

Pumpkin Cheesecake in a Gingersnap Crust
Yummy! Everyone was so impressed with this dessert at Thanksgiving this year. It will certainly become a family favorite. I baked it exactly as the recipe stated but I did bake it in a water bath. The top was very slightly darker that I would have liked it but it tasted wonderful. Will absolutely make this again!
