About this Cook
I'm a mom of three and like to cook for our family and for friends. I love bike riding and kayaking and reading with the kids. I take about 100 pictures a day -- nah, probably a week.
My favorite things to cook
I love things that turn out great but don't take all day to make, I love to make things that are aesthetically pleasing. I love to make vegetables fun. The shredded brussel sprouts on this site were a fantastic find -- the teachers at Teachers Appreciation all wanted the recipe.
My favorite family cooking traditions
My grandfather is Spanish, I wish I had more of his recipes. I do have an original gazpacho recipe (which does NOT include tomato juice, thank you very much), and my grandmother (from the other side) is Mexican, so I make killer enchiladas.

Every time I make something new and it rocks.
My cooking tragedies
The first 20 times I tried to make grandpa's gazpacho. And I almost always burn the last batch of cookies I bake.

Whole Grain Banana Muffins
SO glad to find a healthy banana muffin recipe... and YUM… totally stuck to the muffin papers, but so delicious… I used oat/rye flakes in lieu of oat bran… shoulda added ground up flax seed, but didn’t remember to. Added some brown sugar and instead of raisins added cranberry/apple/carrot chutney. Used all yogurt instead of sour cream, made applesauce from scratch and one egg instead of egg whites. Came out fantastic! Might make a great bread... and would totally eliminate the sticky paper situation! I added a cream cheese icing (not healthy!) since they're a b day treat at my daughter's school... and sprinkles, of course... she's 3! :)

Lentil Soup
I am making this now and the broth tastes fantastic – I used the low sodium vegetable broth – it’s supposed to be ½ cube for every cup of water, I used 6 cubes for 8 cups of water. I also added extra garlic and used Italian Seasoning when sautéing the veggies (instead of the oregano, bay leaf and basil seperately). I added a lot of cumin and some smoked paprika, then I used an orange chiptle seasoning… both of which are smoky (since I’m not putting ham in these beans, it gives it a nice flavor). I used no salt added basil and oregano diced tomatoes. The beans are a mix of mung beans, lentils, black beans and adzuki beans. I think it’s going to come out really well… I put the soaked beans, sautéed veggies and extra Orange Chipotle and cumin in the crock pot for the next four hours. I think I’ll make some jalepeno cornbread to go with it. With the addition of my spices I did not add additional salt and pepper, nor did I add vinegar. OH, and I used leeks in lieu of onions and will add fresh chopped green onions and spinach to the beans before serving thereby eliminated the "yucky spinach for leftovers" some reviewers complained about -- also fresh veggies will give it nice flavor and texture.

French Toast I
Last time I tried to make french toast I screwed it up royally... I think I let the bread soak up too much mix and I ended up with egg toast. The way to do it is just to dunk the bread in the mix and put it in the pan. After about 8 years and ready to try again this recipe was easy, tasty and a definite do again... and again... and again. It's my husband's favorite breakfast. I wish I'd tried again 8 years ago! It's super easy!
