About this Cook
I'M 25 SINGLE AND LIVING WITH 2 ROOMMATES. I'M BASICALLY THE DESIGNATED CHEF OF THE HOUSE BUT DON'T EVER MIND BECAUSE I ABSOLUTELY LOVE BEING IN THE KITCHEN. I LEARNED A LOT OF WHAT I KNOW FROM WATCHING MY MOM GROWING UP, BUT I'M A HUGE FAN OF GRABBING WHATEVER WE'VE GOT IN THE PANTRY AND THROWING IT ALL IN A POT.
My favorite things to cook
CASSEROLES FOR SURE, THEY'RE JUST A GREAT COMFORT FOOD AND USUALLY FEED TONS! I'M ALSO A FAN OF PARTY APPETIZERS AND FINGER FOODS...ANY GOOD REASON TO GET EVERYBODY TOGETHER.
My favorite family cooking traditions
SUNDAY NIGHT DINNERS WITH THE FAMILY. WITH ALL OF OUR BUSY SCHEDULES WE DON'T REALLY SEE EACH OTHER THAT MUCH ANYMORE. EVERY SUNDAY IS DESIGNATED FAMILY DINNER NIGHT AND GIVES US ONE NIGHT DURING THE WEEK TO CATCH UP WHAT EVERYBODY ELSE IS DOING.
My cooking triumphs
CHILE. WE ALWAYS HAD IT AS A KID GROWIN UP AND UP UNTIL A MONTH OR SO AGO I HAD NEVER EVEN ATTEMPTED IT. BUT THEN I DID, AND I THINK I'VE PERFECTED IT TO THE TEE!

Easy Chicken Enchiladas
For the LONGEST time I have wanted to make my own enchiladas, and for some reason thought it would take too much effort. I was so wrong. And this recipe was amazing. The only thing i changed was omitting half of the sour cream because my boyfriend is not a fan. I also added red enchilada sauce over the tops before covering with cheese. Simply amazing!! All of my guests raved that they were definately restaurant quality. I will absolutely be adding these to our recipe rotation.

Slow Cooker Pulled Pork
So my not-so-smart roommate went to the store and bought cream soda, rather than root beer. Turns, out it was a winner!! I also used a pork shoulder and after 8 hours it absolutey delicious. We used Corky's original mixed with Corky's Apple flavored bbq sauce. I took this to work and everybody asked for the recipe! I may never make bbq on the grill again!

Chicken and Green Bean Casserole
Very good base recipe. I followed it exactly and poured it over bow tie pasta. Really simple and uses items most people always have on hand, which is exactly what i was looking for. next time I will add a few extras just to jazz things up!
