Easy Microwave Chocolate Cake
First try...made it as the recipe says. It was okay, my very young kids liked it, but it was dry and not chocolatey enough. I only cooked it 2 minutes, but it was very over done. I will try again, with a little extra sugar, extra cocoa, and only cook it 90 seconds. Better to be moist and gooey than had and tough!

Vegan Brownies
These were PERFECT chewy brownies when I made them with 3/4 cup applesauce and 1/4 cup oil and added walnuts to them! AWESOME! Because there is no egg in them, even your kids can lick the spoon safely! ENJOY!

Triple the Ginger Cookies
These are buttery, spicy cookies. I love the candied ginger...what a fun treat! I used slightly less sugar and made a triple batch. I rolled half the recipe into balls, rolled them in sugar and froze them on a plate. Then I put the frozen cookie dough balls in an air tight container and left them in my freezer. I can make a small batch at a time by putting them on a baking stone and cooking them until they are golden brown. By making a small batch at a time, I don't eat "too many" at once.
