It has been a few days since I have eaten this soup... I just felt like something was missing... I also had added some okra from our garden... the squash I used was from our garden as well... I prob used more curry than normal which I found I love! But the okra had made the texture a "tad" bit slimy... as okra does tend to do, and the squash is almost a SWEET vegetable, and I felt it didn't go with the rest of the ingredients or at the very least I felt like something was missing...BUT today, after avoiding this soup for a few days,i was starving and am waiting on my dinner to cook, I decide to go ahead and see if it is still good and make myself eat some.... I grabbed a packet of Taco Bell's HOT sauce and.... it made this soup go from a 3 star "eh" recipe to a WOW!!!! This is what it was missing! I could DRINK this soup religiously now!!! Good deal... I didn't want to rate it till I found out what I didn't like or what was missing as even a great recipe won't be the same for everyone... we all have different tastes and need to experiment just a little and I am so glad i found out what I needed!!!!! This is it.... wonderful... and I didn't even use the choc chips... i forgot... and I made it with dark choc fudge and followed the other reviews about the milk and 1/2 the oil... baked it at 335... rubbed butter to grease the pan and it just popped onto the plate with no effort... and it tastes....oh.... so.... gooood. Thanks for the great base recipe.

You are NEVER supposed to cook extra virgin olive oil on high heat because of the low smoke point. Use canola or some veg oil that will not scorch on a higher heat than it is made for... rated in the middle since recipe is good.

I made a few changes, not big, so I do not feel as though I need to give you many details, but I chopped up celery real fine and put that in the stuffing. These were really just great! I also, set them in a baking dish with alfredo sauce, peppers, onion, and noodles. Different and delish!

Absolutely LOVE this meatloaf... not a big fan of oregano, so this was awesome not having that spice to overpower the recipe! I am actually eating it right now for the second day in a row, and I made it for my boyfriend yesterday and he made a a sandwich out of it first, and said it is the all time best meatloaf! Keeper? I would say so... I used regular seasoned bread crumbs instead and only one cup as suggested. Also, I added a tablespoon of salsa to the meat mix, and pushed fresh jalepeno pieces into the top of loaf (after washing and deseeding) and then last 15 minutes of baking, added a mix of 2 tbs brown sugar, lil over half cup ketchup and 2 tbs mustard stirred together to the top of loaf as well... I am so satisfied... thank you Eileen...
