Great recipe! I followed another reviewer's suggestion, using only 1/3 cup of butter and 2/3 cup of brown sugar. Also, I added another 2 tablespoons of milk, which made it moist enough. Tasty!! I almost ate the whole batch myself. I will try to add chocolate chips or cranberries next time. Thanks for the recipe!

Pumpkin-Pecan Cake Roll

This is great!! Quick and easy. 15 minutes might be a little long. When I was rolling it the first time to let it cool, I felt like it was gonna crack. Thankfully it didn't. I will adjust the baking time next time. Great desert for holiday seasons!! Will definitely make it again. Hopefully it will be as pretty as the one on the picture.

Irish Brown Soda Bread

It's really easy and quick! Tastes good, too. I substitute the buttermilk with non-fat yogurt, half the flour and add 1/3 cup of rolled oats. To increase the moist, I also add two tablespoons of skim milk. It turns out really good!

Easy Sugar Cookies

I don't like greasy cookies, so I use only 1/4 cup of butter and 1 cup of sugar. To add moist and more flavor, I add 1/2 cup of skim milk and 1 teaspoon cinnamon. They taste good. But in this way they are more like biscuits.

Baked Pasta Casserole

So good!! I changed a little: (1) eliminated garlic; (2) added grounded black pepper when stirring the pasta and onion and spinach; (3) used shredded reduced-fat cheddar cheese instead of mozzarella; (4) put cheese only on top of the pasta instead of layering; and (5) before putting on cheese, put a layer of meshed tofu. Good and kinda healthy. Good vege recipe!!

Yummy!! I added some 1/4 teaspoon vanilla extract and 1 teaspoon of cinnamon. It tasted great!! Definitely a keeper! ******* To lower fat, I suggest using apple sauce. I used all butter this time. After the bread cooled, it was so greasy...
