"Me" in this case is going to be the whole family. We have decided to cook as a family. Each of us has a night of the week that we choose a recipe and prepare it for the rest of the family. Mom, Dad, and two daughters, 19 and 15.

AS the user name implies....I (Mom), am a disaster in the kitchen. So I am hoping to change that using this site as a guide.

Tater Tot Casserole II
I really like this recipe for its ease. I also appreciate that it can be changed easily. I like to add garlic, onion, salt, pepper, and a little bit of cumin to the ground beef while I'm browning it. I also add cheese and a mix of veggies. We've also done it with turkey or chicken, using broccoli and carrots for the veggies....very good!

Crispy Herb Baked Chicken
I made this recipe last night for my family and a guest. The only alteration I made was to add some poultry seasoning with a little mesquite in it. HUGE hit ...they ate it all. I made boneless strips so the cooking time was reduced. Great recipe!

Potato Soup V
I doubled this recipe and didn't include the onions. I added 3 cups of left over ham from Easter and instead of using water to cover the veggies I used chicken broth and reduced the amount of boullion cubes. This was my first attempt at a potato soup and it turned out good. Total comfort food. I think I might try the tips about adding some bacon next time..get a bit more flavor. I did make the cheese biscuits with it ..a MUST!
