My Thanksgiving Cooking In An RV

Ok, I started that rv blog a while back and it was amazing that I had so many responses. I know several posters asked me to keep doing it, so I decided I would blog about the wonders of trying to get my portion of a Thanksgiving dinner done. Last week, my friend Sarah and I decided we would do Thanksgiving at her huge beautiful house and that she wanted to cook the majority of the dinner. I thought that sounded ok and asked her what she wanted me to do. She said to take care of the pies. So, I have whole pumpkins in storage in the front of the rv here and thought I would cook one down for a pie. Then I scratched that idea and didn't think about it until Monday. Then I posted for help to make my feeble mind up on the RE and got awesome suggestions and seriously considered some of them and came up with what I would do: Chocolate Bourbon Pecan Pie from this site, a classic apple pie, and my own recipe of Blueberry Pie with an Oatmeal Crunch Topping (no, it's not posted yet, sorry), and 2 no-bake cheesecakes. I also decided to do a hurkin' big bowl full of layers of jello. I'm not thinking this is going to make in my yearly list of must-have's on Thanksgiving ever again! And, of course, the Blue Cranberry Sauce recipe from this site and a sweet potato casserole of some type. I didn't even start any of this until around 3 pm yesterday! I'm a procrastinater, big time!! And also, more rv park drama...the Methhead meets Tommy Chong...I was sitting here looking out my window for once, the blinds were open, things have been pretty tame the last couple of weeks. The methhead was out in his car (big suprise) doing whatever it is that methheads do and this guy (FOR REAL) walks up and he looks like Tommy Chong from the Cheech & Chong movies. I thought...whoa! So I sat here for a few and then you could totally tell they were in a fight. So what did I do? I cracked open my window, of course...I don't have cable or satellite...and they were really getting into it. Then I heard the Chong-looking guy start talking to the methhead and HE SOUNDED LIKE CHONG, TOO!! I'm thinking "no way" but seriously. It was one of those times that I couldn't remember to grab the camera. Anyhow, I went out there and told them to knock it off or I was calling the cops, so they quit. So around 3, I started on the first layer of jello. An hour later the manager, who we have decided not to buy his truck but, rather, go look for another park to reside in, called me and asked me if I had seen the altercation. Altercation? Looked more like a p!ssing match to me, but, ok, altercation...and I told him yes, that the methhead was minding his own business and Chong wanted to pick a fight because he wouldn't leave. And then the manager told me it was his son...I know, I want to see his brother and see if it's Cheech, for real...and he wasn't in the wrong. That made me kinda mad. And I let him have it and told him not to try to involve me in the ongoing soap opera, I just wanted to observe. And I told him I was really getting uncomfortable with the whole push to buy his truck deal so we were going to back out of it all together.
 After all that, I was ready to bake something. I made the apple pie first, then I baked off the sweet potatoes for the casserole (which one at this point, I still hadn't figured out) and made the Blue Cranberry Sauce. After waiting until 7 pm for the first layer of jello to set, I had also made the Chocolate Bourbon Pecan Pie. I was kinda furious. I think I also managed to post an off topic rant on the RE and want to send a big thank you out to all that helped me calm down. I think I finally went to bed around midnight waiting to add another layer to that dang jello thing. Then I woke to my husband calling at 5:30 am and getting into an arguement with him to dropping a whole bottle of coffee creamer in the dogs' water and getting some beautiful morning pictures to finally getting around to baking that blueberry pie for our friends at around 11 am and trying to watch the live webcast from AllRecipes and trying to win a prize, and then finally winning a prize...I don't know what yet...to dealing with dogs that want to throw up on the bed, my husband late in coming home, ohhhh...how about just looking at the pictures of what I did to relieve my stress.....and p.s. the sweet potato casserole is: 4 large roasted, peeled sweet potatoes, 1 can of drained crushed pineapple, reserve around 2 tablespoons, 1 airplane shot bottle of Jack Daniels, a handful of sweetened flaked coconut, I'm guessing around 1/4 cup honey, a couple of dashes each: coarse ground black pepper, cinnamon and nutmeg, and 1/3 cup chopped macadamia nuts. I drizzled extra honey on the top and a light sprinkle of cinnamon and baked at 350 for about 35 minutes in a propane oven. And, by the way, I think I finally got the oven figured out ;P

What a day you had..talk about multi tasking! Hope you got an airplane shot for yourself while you were at it! Have a happy Thanksgiving and enjoy the results of all your hard work.

HAHAHA that's too funny. RV parks are so full of drama.... my family used to spend all summer in RV parks and it's so fun getting to know the weirdos. I live in an apartment building now and there's a couple one floor below us who have very, very loud arguments at least weekly. Luckily it's not late at night, but it's funny hearing exactly which dishes the husband forgot to wash, or which woman has been calling him more than usual. Always ends in one of them storming out.... Glad you got everything done, it looks delicious! Blueberry and chocolate bourbon pecan pie in an RV... you are a hero and a goddess.

and, wouldn't you know it, my husband bought an 8 lb. prime rib in Eastern Washington and is bringing it home...where am I gonna put THAT!! I think we'll cut it half and give half to some really good friends and smoke the other half Friday and have another celebration!

well, I like to cook, and if space is limited, I'm going to find the best way to break the limitations. It's actually not that difficult, my main problem is that I am space challenged, so a cutting board over the sink works as extra counter space. When you are in this kinda situation, you can learn to adapt...I just won't make pie crust from scratch because of space...wait a minute!...I never made pie crust before the rv..I just can't make them. But I can sure tell you who makes the best ones!

Our first house had a tiny kitchen with no counter space. After the kids were born I gave up making crust from scratch. Why stress over that one detail?! Your pies look delicious. LOL - I remember the cutting board over the sink - I did that for years. Happy Thanksgiving!

Ok, that chocolate bourbon pecan pie was one of the best things I have ever ate in my life. Sarah made some stuffed mushrooms that were to die for and told me how to do them..so easy! Lots of food, a ton of drink...HOLY SANGRIA! I had my champagne and chambord, and if you haven't ever tried it, I fully recommend it. The sangria was apple juice, blackberry merlot, peach flavored white zin and believe it or not...blue raspberry MD 20/20...and it was like the most potent kool-aid ever! Fantastic! One of the guests was not a fan of cranberries until he tried the blue cranberry sauce I made, he couldn't get enough of it, so I left the container for him to finish. But we are home (thanks to the husband driving because the wife ws in no shape). So I think we are going into turkey coma la=la land and will continue with this tomorrow when we have our dinner #2--smoked prime rib!

WW, I was just thinking of you and your trailer because I'm watching a movie from 1954 with Lucille Ball and Desi Arnaz called The Long, Long Trailer. It's hilarious!

I live that...ooops! love that movie! Yesterday, I had great plans of a nice dinner for the husband and, alas, I got started on the Jack Daniels and well, we got the prime rib smoked, and the smell drew out the neighbor and he wound up coming over, so no left-overs for chili, but that's ok...I got some really nice sirloin burger for $1.42 (coupon story...love those) so that is going into the chili. Will post photos later on!

Hubby and I watched The Long, Long Trailer last night a howled with laughter. We got our trailer in Sept. You are doing an amazing job of turning of fine food.

Hey, witchywoman, haven't seen you come to visit this week, thought that I would stop by...just FYI, I finally had time to make Hot and Sour Soup...the recipe will be up this weekend!!! Stay tuned...and it was a great one too...my "judge" said, "This is really really good!!"

I am interested in the pomegranet quacamole that you mentioned in an earlier blog. It has me intriqued and I would love the recipe. I love quacamole and I love pomegranets. And of course, I love your blogs.

About Me 
I have been married for over 4 years. Being married to an electrician, we may have to drop everything and move, so I live in a rv. We have three 4-legged kids: 2 dogs: Puppa and Sasha and one mouthy girl cat named Dave. I am a musician. I love to cook anything and that's what helps me to relax. My favorite cuisines are Thai, Mexican and Italian. I live by Mt. St. Helens in SW Washington state, but I grew up in Forks, the little town made famous by the Twilight movies. I love to travel, I like to read, especially cookbooks or magazines and true crime, I am venturing into baking and after working in a restaurant, I NEVER want to own one.

I ususally wind up making the entire Thanksgiving and Christmas dinners by myself, except the pumpkin pies, my husband does those!
My cooking triumphs
I made a "kitty litter" cake for a co-worker--grey icing, grapenuts and almond roca--even a lavendar kitty litter scoop to serve the thing with--it was hilarious!! And now I can add yeast breads to this list!
My cooking tragedies
anything I try to bake that doesn't come from a box, although this site has improved my baking skills threefold...thank to all of you here!
