I mixed sour cream, mayonnaise, and dijon mustard to coat the cutlets. i then dredged them in a mixture of corn flake crumbs, and panko (what i had on hand). I seasoned them with Seasoned salt and italian seasoning. I sprayed a baking pan with Pam and cooked them for 13 minutes in a preheated oven @ 425. Prior to baking i let the cutlets sit for 30 minutes to let flavors meld. they were moist and delicious. The topping was delicious, but not real crunchy. You could broil them a bit or add more panko for crispiness.
