I've been effectively vegetarian for several months now, stepped up to vegan a couple of weeks ago. Learning to cook without dairy is a challenge and I'm always interested in new ideas and recipes.

Hariton's 'Famous' Vegetarian Casserole
Made the 9 serving version of this recipe with a few alterations: One butternut squash for 2 summer squash, used the whole can of tomato sauce, added about 2 Tbsp. balsamic vinegar and dropped the cooking time down to 1 1/2 hour. Turned out VERY well. My roommate described it as "one of the best things he's ever eaten."

Quinoa Chard Pilaf
Tried this recipe a few months ago. It was my first experience with quinoa and I must say I was VERY impressed. Quinoa is now a staple food in my house. Simple, satisfying and flavorful, I've passed this on to everyone I know who cooks.
