Chuck's Favorite Mac and Cheese

Good, but not great. This did not have good eye appeal. I scaled the recipe to 3 servings, but easily got 5 servings. I had to sub ricotta cheese for the cottage cheese because that is what I had. This may be why it came out

Mom's Baked Beans I

Very tasty! I halved this recipe and baked in a loaf pan. My only addition was 1/4 cup of shredded pork. Topped with 2 strips of bacon before cooking.

Irene's Barbeque Sauce

This was good with additions for my family. This was too vinegary and spicy for the kids. Addition of 2 tablespoons of water, 2 tablespoon ketchup, 1 tablespoon dark corn syrup, 1 teaspoon brown sugar. Nice and sweet with a slight heat undertone.

Teriyaki Onion Burgers

VERY moist and flavorful burger! I marinated for 1 hour in the fridge with teriyaki sauce, worchestershire sauce and liquid smoke, then added the onions. My family really liked this one.

California Italian Wedding Soup

DELICIOUS! Fresh herbs are a must to give this such flavor. My meatballs were 1/2" and I baked them at 350 for 10 minutes to release the grease. I like this recipe for the ease of making it in such a short time. The only thing missing was those toasted cheddar bread cubes. Will make again!

Taco Turkey Wraps

VERY GOOD! I added lettuce and fresh heirloom tomato slices from the garden. Instead of using all sour cream mixed with the taco seasoning, I used a three way mixture of ranch, mayo & sour cream. I really enjoyed the taco seasoning addition, changes up the wrap from the traditional way using mayo. Will make again.

Ice Cream Sticky Buns

DELICIOUS but sweet!! I had a small amount of vanilla ice I needed to get rid of and found this recipe. I cut both sugars back by half. I cut my pieces smaller so I got more than 36 pieces. I also did this so as not to have any uncooked pieces in the center. I let rise for 1 hour but mine did not double in size. I see there is no Nutritional Information listed for this recipe cause I'm sure I'd think twice before making this!

Yellow Squash Casserole

halved the recipe and cooked in a ceramic loaf pan. I steamed the large squash slices for 3 minutes with minced garlic and the onion. I layered the steamed squash slices with the *uncooked* slices. Tossed on the topping, then the egg mixture and then drizzled the butter and baked for 20 minutes. I was afraid the steamed slices would make the squash overcooked and mushy and it did. Next time I make this I will not steam the slices first, but slice thinly before baking. VERY GOOD!

Feta Stuffed Jalapenos

Thank goodness I only did 3 of these to try them! I did scale the serving size to 3. Hubby said the feta completely overpowered, and he has had his share of stuffed jalapenos in the past. I think the ratio of feta to cream cheese should be reversed. I may just skip these and continue making the bacon wrapped grilled jalapenos.

Watermelon Cooler Slushy

REFRESHING! I tripled the ice to make it more slushy and didn't add all the sugar at once, but to taste. I also stuck the leftovers in the freezer and let thaw for 10 minutes, then added a small amount of water and poured into a glass. Either way, I will be making this again when I have more watermelon than I know what to do with!

Lemony Cucumbers

Nice flavor with the lemon! I have tons of cucumbers from the garden and this is another good recipe to use for them. Light and refreshing. Next time I will add garden fresh tomatoes.

Banana-Nut Chip Bread

I love quick breads and this one is another keeper. I halved the recipe and used only one egg. Only used about 1/8 cup of walnuts. I baked in 2 mini loaf pans at 325 for 38 minutes.

Double Chili Cheese Dip

VERY GOOD! I halved the recipe and baked 15 minutes. My daughter and I really liked this, but son and hubby said it didn't have enough heat. I will make again and add hot sauce or sliced jalepenos.

Spaghetti Salad I

Great summer salad to use garden veggies. I used radiatore pasta in place of spaghetti noodles to *hold* the dressing and make it easier to pick up the pasta with a fork! Instead of bottled italian dressing I made the Italian Dressing recipe from this site and used it. Added a handful of cubed fresh mozzarella cheese. Used grape tomatoes in place of regular tomatoes. Next time I will add chopped pepperoni and broccoli and eliminate the poppy seeds.

Fried Green Tomatoes

DELICIOUS! Wasn't sure I would like these from the first bite, but ended up eating 3! I scaled the recipe to 3, used 2 small to medium sized tomatoes (the first ones from my garden this year)! I did not have saltine crackers so I used multi-grain club crackers. I will be making these again!

Italian Dressing Mix

Very good! I scaled back the recipe to 8 servings. I didn't have garlic salt so I used garlic powder and added the 2 teaspoon of the salt listed in the recipe. I used this in the Spaghetti Salad I recipe. It's so nice not to have to buy those expensive italian seasoning grinders anymore!

Norwegian Pancakes - Pannekaken

This was quick and easy recipe to make for breakfast. I used Pam and eye-balled the amount to go into the pan. Cooks quickly and easy to turn over. I scaled back to 2 servings (got 4) and topped with the Apple-Cinnamon Syrup recipe.

DELICIOUS, but very sweet! I halved the recipe and used granny smith apples. I followed the recipe and feel that it has too much sugar. I did use this recipe on plain crepes (Norwegian Pancakes - Pannekaken) so it worked. Next time I will cut back on the sugar.

My family thoroughly enjoyed this recipe! I scaled back the servings to 3. I added fresh yellow squash, 1/2" slices, quartered and sauteed with the garlic. The basil adds great flavor. Used chicken tenders in place of chicken cutlets. My only complaint was using 3 separate pans to prepare everything in. DELICIOUS!!

Chocolate Walnut Bars

IMO, just an average bar. The chocolate part was very, very thin and runny before baking. Also watch the crust while baking, at 20 minutes mine was slightly overcooked. I didn't cut until the next morning (and it was difficult to cut) because the crust was hard, even after sitting for 15 minutes. I don't think I will make this one again.
