Hugh's Dry Rub

Good, but not great. I halved the recipe to try out of a few different pieces of meat. I only used 1 tablespoon of black pepper and 1 tablespoon of cayenne (kids). I used about 3 tablespoon on a pork butt cooked on low in the crock pot for 9 hours and it really added nice flavor. I also tried this on chicken tenders on the grill, not happy with the flavor on these.

Amazing Cocktail Sauce

The men in the house are the seafood eaters and enjoyed this sauce with their grilled shrimp. Next time I will add a few more dashes of hot sauce.*

Low Fat Buttermilk Ranch Dressing

Good and tangy taste, but very thin. I thought there was too much buttermilk in this recipe and the buttermilk taste overpowered this dressing. I had to add 1/2 teaspoon of white sugar. This dressing would do nicely on a salad, but would not use it to dip veggies in. I let this sit in fridge overnight before using to enhance flavors. Next time I will use less buttermilk.

Crispy Cucumbers and Tomatoes in Dill Dressing

Too tart and lacked flavor. I scaled recipe back to 3 servings, used fresh picked tomatoes and a large cucumber. Subbed vidalia onion for the red onion. Let marinate overnight but didn't help enhance the flavor. Think I would rather just slice the tomato and cucumber and serve!

Lighter Fettuccini Alfredo

I made this recipe for my daughter and her friends for dinner and they inhaled it! I had to use 2% milk and added leftover grilled chicken breasts. Will make again.

Chicken Salad Balsamic

Spicy Oatmeal Cookies

Fettuccini with Basil and Brie

I scaled back to 4 servings. Used only a pinch of black pepper and fresh picked roma tomatoes. I love brie and this adds a wonderful flavor to this dish! The second time I made this pasta, I used penne, which made it easier to eat! Added fresh roma and heirloom tomatoes! Soooo Good!!

Mozzarella and Tomato Appetizer

Loved these! I used fresh basil and grape tomatoes from my garden. Could not find the small mozzarella balls at the store so I got a large marinated ones and cut into squares. The only time consuming thing is folding the sliced procuitto (mine was very thin). I used EVOO/balsamic in place of the italian dressing.

Mom's Cucumber Salad

Very Good! I scaled back to 4 servings and only used about 2 tablespoons of sugar. After slicing cucumber I drained them for about 15 minutes. This is to keep from adding additional liquid to the dressing and making it thin and watery. Great summer salad

Chicken and Sun-Dried Tomato Bruschetta

I really enjoyed this for a summer lunch. I used leftover grilled chicken. Drizzled olive oil over the petite french bread loaf slices before toasting. Added crushed walnuts and chopped the spinach into small pieces.

Sesame Chicken Pasta Salad

Good, but needs more veggies! I scaled the recipe back to 3 servings and it still made alot!! I added fresh picked grape tomatoes and didn't add the full amount of spinach. There seems to be too much dressing, but after refrigerating the pasta absorbs it. Next time I will make extra dressing and pour on the salad before serving.

Amazing Spicy Grilled Shrimp

I scaled this recipe to 3 servings and let marinade for 45 minutes. My son decided to add a few drops of *atomic* hot sauce to the marinade to make it really HOT!!! Placed them on the smoker for 6 minutes total cooking time. Will make again.

Vintage Lemonade

DELICIOUS!! This is the second time I've made this in the last week. My family LOVED it so much I couldn't get a photo before it was all gone! This does take a little time but has so much lemon flavor. I used a potato peeler and cut the "1 slices of the outer lemon. I added double the water because it was too tart for our family following the recipe exactly! Next time, I will only use 1/2 the sugar with the lemon pieces, and try adding agave nectar to sweeten to our family preference. I think it would be fun to try this recipe using oranges!

Dan's Favorite Chicken Sandwich

I had leftover grilled chicken to use for this sandwich. I used 9 grain petite bread, subbed fresh spinach in place of the avocado and mixed Bubba's BBQ sauce recipe with the Herbed Buttermilk Parmesan Dressing recipe. Nice summer sandwich.

Black Bottom Cupcakes I

The chocolate chips (Ghiradelli 60% cacao) overpowered this cupcakeI Next time I will use only HALF the amount of chips or use tollhouse chocolate chips. I made a mini bundt cake, placing the cream cheese filling in the bottom and then covering with the chocolate. Baked for 32 min. I also got 4 additional regular sized muffins, baked at 23 minutes. There was alot of extra cream cheese filling left over. My filling did sink well into the mini bundt cake, but sat on top of the cupcakes.

Jalapeno Popper Spread

Very GOOD. I scaled recipe down to 8 servings. My cheese separated after coming out of the microwave (or it was green chili juice). After cooling some, it did mix better. I only added some Jalapeno after the kids ate their share!

Aunt Betty's Banana Pudding

I scaled this recipe to 5 servings and divided between 4 dessert glasses. I did not use the whipped topping (didn't have) so I used additional sour cream and milk. I used one large sliced banana. Personally, the condensed milk makes this too sweet, but the kids LOVED them. Next time I make these, I will prepare pudding mix according to the package with 2% milk and not add the condensed milk or whipped cream to the pudding mixture. Will top each serving with a small amount of whipped cream.
