Rick's Special Buttercream Frosting

LOVE this frosting! I had to sub half the shortening with butter. I used to frost cupcakes. I liked the frosting even better after it was in the fridge. Will definitely use again.

Curry Kabobs

Flavorful & Moist!!! I marinated 24 hours. Due to the weather, I had to saute on the stove. The marinate did not look too appealing but the end result tasted very good!! I served with Angel Hair Broccolini.

Butternut Squash Bisque

AWESOME! Smooth and creamy. I scaled recipe to 2 servings because the squash was small. Had to sub chicken broth in place of vegetable. Roasted squash in 375 oven for 35 minutes. I did not transfer to my blender, but used my immersion blender right in the pan. With my garden full of this squash, I will be making this recipe again.

Sweet-and-Sour Skewered Shrimp

Made this for my daughter and her friend for Sunday dinner. They said it really didn't have much taste. I did marinate for 1 hour, skipped the green pepper and mushrooms (their preference). Will keep looking for a good shrimp marinade recipe.

Chicken Breasts with Lime Sauce

WOW...Refreshing and tasty dish!!! I love the lime in this. I've don't think I've ever had the combination of chicken and lime in a dish..didn't know what I was missing. I did scale the recipe down to 2 servings (to try out) and doubled the sauce. Will make this again!

Juicy Fruit Salad

Nice for the summer. I used watermelon in place of grapes and added mandarin oranges. I liked the addition of the apple to make it crunchy. It's best to use a firm banana for this so it does not get mushy. My family did not care for the canned pineapple so I may try fresh next time.

Grill Dough

SOOOOO GOOD!!!!!! Okay, to be fair yeast breads are my downfall. It took me 2 tries to get my yeast to proof. I used my kitchen aid mixer with dough hook attachment to mix. Even with floured hands, dough was very sticky. I divided into 2 separate dough balls to rise for 1 hour. The dough was very delicate and still quite sticky so I added more flour and kneaded some before rolling out into about two 8" circles. Used a charcoal grill/smoker and got heat up to 250 degrees. Placed on grill *without* toppings first, because my dough was a bit thick. Grilled one side, removed from heat and added toppings. One pizza was basil pesto, fresh mozzarella, and fresh picked roma tomatoes (Pioneer Woman recipe). Back on the grill another 5 minutes, then put under the broiler on low for 3 minutes. Second pizza was tomato sauce, shredded mozzarella and pepperoni. The second pizza we put toppings on *before grilling*. However, because our crust was thicker in took longer to grill. Had to place under the broiler for a few minutes also. Make sure to *place your toppings* on your pizza dough *after* you place it on the pizza peel! When I make these again I will grill one side first BEFORE adding the toppings.

Goat Cheese Stuffed Tomatoes

Good, but needs adjustments. The ratio of stuffing is not enough to fill the tomato (the recipe does not state the size of the tomato). I used a medium to large heirloom tomato. I would suggest after removing the seeds to rinse, sprinkle with salt and turn upside down to drain. I added a few tablespoons of panko bread crumbs in with the cheese. Next time I will add albacore tuna or grilled chopped chicken to up the protein.

Taco Salad with Ranch Dressing

I made the low fat buttermilk ranch dressing recipe from this site for the salad. I omitted the black olives and used garden fresh veggies (roma tomatoes, cucumbers, green peppers). Instead of crushed tortilla chips, I topped with store bought crushed buttermilk ranch pretzels bits.

Kathy's Award Winning Barbeque Sauce

VERY Good! Sweet, with subtle heat! This is a nice thick sauce that gets better after refrigerating overight. I scaled back to 8 servings to try out. For the kids sake, I cut the cayenne and black pepper back to 1/4 teaspoon. I did not have tomato juice on hand so I subbed 3 tablespoon of crushed canned tomatoes. I used this sauce on baby back ribs with were rubbed with the BBQ Dry Rub Recipe. This sauce is every bit as good and comparable to the Big Al's K.C. Bar-B-Q Sauce recipe!

Chrissy's Sweet 'n' Sour Tomato Salad

I have tried several tomato salads on this site and this one is the best yet. It has the right ratio of oil, vinegar and sugar. I used the full amount of tomatoes but did halve the dressing and it was more than enough to cover the roma tomatoes. I used vidalia onion and added chopped cucumber.

Merritt's Butternut Squash Gratin

Okay Merritt, worthy of a 5 star rating!!! I'm a butternut squash *newbie* and this dish was VERY GOOD! My squash came from my garden, so I'm not sure it was 2.5 lbs (measured 9"). Since I wasn't sure of the weight, I did cut back on all the cheeses slightly. Prep work is about 30 minutes, but the end result is worth it. I used panko bread crumbs slightly crushed (as suggested by the submitter) and this added nice texture. I enjoyed the combination of the three cheeses in this dish! Since I have an abundance of this squash taking over the yard, I will be making this a few times this summer!! THANKS for a great recipe!

Fruit Cocktail Salad

This was too sweet as is and only a 3 star recipe. After tasting, I mixed in 1/4 cup plain non-fat yogurt and 1/4 cup fat free sour cream. Topped with mini marshmallows and coconut upon serving.

Spicy Maple Baked Beans

A family hit! I scaled this recipe to 4 servings and used 2 cans of beans. Had to make substitutions with ingredients I had on hand so unable to rate 5 stars. Used EVOO to saute minced and garlic, subbed 2 tablespoons of chili sauce in place of the chili powder and used chopped pulled pork in place of the ham.

Barbie's Tuna Salad

I really enjoyed this tuna salad! I've eaten tuna a lot over the years with just mayo and recently switched to low fat ranch dressing. I think I'll use this recipe for tuna when not making tuna salad using pesto!
