Italian Meatball and Cheese Tortellini Soup

Very tasty and VERY easy! I will definitely make this one again. I used turkey meatballs, and since they weren't really thawed out (I had just bought them) I put them under the broiler first. Plus I thought browning them might add something as well. Left out the kale and added celery and green pepper instead. Used tri-color tortellini from Sam's Club. The hubby gave it a thumbs up! Very good!!!!

Kitchen Sink Cookies

Turned out pretty tasty. Took advice of some other reviews and adjusted the flour to 2 cups - 1 each of white and whole wheat. Used 1 cup of the chocolate chips and 1 of butterscotch, and walnuts. They are a little dry, but very tasty. Also as other reviewers said, they DO NOT spread. So if you don't want thick cookies you definitely need to flatten them.

Slow Cooker Stuffing

This was great and I'm going to use it as my goto stuffing recipe from now on. Go easy on the broth like others said and it will turn out perfect. Parts of it got pretty crispy so I added broth, but them I liked that too because it was really like it had been in the oven. Super easy!

Chicken Enchiladas Supreme

Excellent! As another reviewer said, I used the southwest creme as well. Gave them a nice kick! I didn't have green pepper on hand so I used yellow instead...I also added a can of diced green chilies. Would definitely make this again!

Delicious Ham and Potato Soup

Great recipe! It had the perfect consistency. I actually started it the night before to save time and made just the stock/veggie part, then warmed it back up the next night and prepared the milk. It turned out great. I'm saving this one! I also added a little shredded cheese on top when I served it.

Actually Delicious Turkey Burgers

Excellent! Made them pretty much as called for and my husband and I really liked them. Grilled 8 on the stove in a cast iron griddle and froze the rest. Will definitely use this recipe again.

Fabulous Beef Tenderloin

Excellent, and SO easy! I will definitely make this again the next time I'm in the mood for beef! UPDATE: I HIGHLY RECOMMEND using normal soy for this. I tried it with Lite/Low Sodium the last time and it was not even close to the awesomeness it was the first time I made it. Back to the original tonight and it was again AWESOME! So I'm tellin' you, go against your better judgement to use the lite soy...or if you must (because this IS a pretty salty dish) try 1/2 normal and 1/2 low sodium (which I may try next time).

Jalapeno Poppers I

These were good! There was plenty of "stuffing" left and I had used 18 peppers, so you could definitely buy a few extras to use it all up. (It's good just spreading it on crackers, tho!) I also used bread crumbs. Served them at a party and my guests liked them and ate them up.

Penne with Spicy Vodka Tomato Cream Sauce

This was excellent and very simple to make. Wanted to use up a small carton of whipped cream I had on hand. Other than using sundried tomato basil chicken sausage I didn't change much about this recipe at all. Added in some fresh herbs (basil, oregano, thyme, Italian parsley) that we had leftover from a previous meal. I thought it rivaled anything I've had before at Noodles, etc. Would definitely make it again.

Chicken With A Bang

This was very good. I used turkey bacon instead to make it a little more low fat. I used diced green chilies in place of the jalapenos.l I also left out the pepper and corn at the end. It didn't really seem necessary. I served it over yellow rice. When the husband says "you should make this again" I know it was good!

Favorite Old Fashioned Gingerbread

very easy to make...tasted pretty good. I'm not a huge fan of molasses, but it did not have a bitter taste to it at all. I didn't have the full tsp of ginger so I know it could have used more. Didn't have time to make gingerbread men, so this was a nice replacement.

Chocolate Cookie Cheesecake

Definitely very rich. We cut big pieces and I actually couldn't finish it all! I used chocolate graham crackers for the crust and forgot to put in the cinnamon, but that was ok. Didn't change a thing otherwise. I wasn't sure if it was not cooked all the way or if it was the sour cream layer that "sunk" into the center, but the center was very cream. I wasn't able to let it cool on the counter since I made it rather late, so maybe it was from putting it directly into the fridge after only 10-15 min. of cool time? But it tasted very good and we all enjoyed it for our Christmas Day dessert.

Slow Cooker Chicken Taco Soup

This soup is one of my favorites to make! I leave out the beans. Added a chopped green pepper. I didn't have tomato sauce on hand but used enchilada sauce and that was a great addition. Also used 1 can of HOT diced tomatoes and one lime/cilantro can. It definitely had heat and a lot of flavor. I usually make the Golden Sweet Cornbread recipe from this site to go with it.

Nanna's Banana Bread

This is a really great banana bread recipe and everyone at work loved it. I'm hanging onto this one! I love that you blend the liquid ingredients together with the bananas. My modifications were to reduce the sugar to 1/2 a cup and I added 1/2 cup of brown sugar to the dry ingredients. I used 1 cup of white and 1 cup of whole wheat flour as well. I also made a crumb topping out of walnuts, about 1 T each flour, cinnamon and then cut in some butter. I made 2 batches (had that many old bananas) and made 1 loaf of bread and 12 muffins. 325 convection oven for exactly 55 min worked perfect!

Spooky Witches Fingers

These were a hit for food day at work! I love Spritz cookies to begin with, so I knew what they would taste like. These are subtle cookies - you could use 2 tsp of almond for a stronger almond taste instead of using almond and vanilla. I didn't want to go through extra work to remove and replace the almonds, so I used a cherry-strawberry jam and dipped the almond in that first and placed it in the formed finger so it baked right on. (I'm photo 129) This worked great to make it a little gory looking, plus added a little flavor. (I didn't want them to taste artificial or like red dye. They were all gone at the end of the day. The recipe makes a lot - I probably had 5-6 dozen. I also followed some of the other reviews and added a mini chocolate chip after they came out of the oven. Definitely form them thin - no thicker than the size of a pinky....otherwize they'll be too fat.
