Slow Cooker Italian Beef for Sandwiches

I couldn't find rump roast so I chose an eye of round roast (I think!). I used "zesty" italian dressing and other than that I didn't change a thing. It has a kick, it was very tasty, very similar to what I've had at restaurants, etc. We'll definitely make this again!

Peanut Butter Noodles

This was great! It tastes a lot like what I get at one of my favorite local restaurants. I used Asian noodles - (the flat ones that look like fettucini). The sauce IS a little sticky like someone else mentioned, where the noodles stuck together a little. But aside from that this was awesome and I'll definitely make it again. I served it with a pork satay I got out of a magainze and that was excellent.

Caramel Corn Snack Mix

The second batch turned out very tasty. Followed the directions for 300 and 30 min the first time and it came out burnt. 2nd time I put it at 250-275, still for 30 minutes, but checked and stirred in 10 minute intervals. Turned out much better. Also lined the 9x13 pans I had it in with parchment paper and I think that helped as well. Would make this again. Giving it as treats for family at Christmas. We'll see what they think about it!

Ginger Drop Cookies

These are great! I'm not a huge ginger/molasses cookie fan, but these are very good. I had fresh ginger on hand, so I substituted 2 tbsp of grated ginger root instead of ground ginger. I also substituted 2 cups of whole wheat flour for 2 of the white flour. I didn't realize the fridge requirement and didn't expect this to be a 2 day project, so I put the dough in the freezer for over an hour instead. I would definitely make these again!

Chocolate Caramel Candy

These are very yummy!!! Suggestion - let them warm up a little before you cut them because the chocolate top will crack and come off otherwise!

Big Soft Ginger Cookies

Very good cookies. My boyfriend will be the big test. He LOVES ginger cookies - so I'm making them as a surprise for Valentine's Day. I substituted 1c of whole wheat flour, and baked on stones. Needed to bake for about 12-13 minutes. Turned out great! Would definitely make these again.

Carne Adovada

This turned out great. I couldn't find pork stew meat, so I used a pork roast instead and cut it into chunks. Instead of using the oven, I put it in my slow cooker for 6/7 hours and it turned out SO tender. Very yummy. Boyfriend ranks it in the "top 5" best dishes I've ever made. Would definitely try this again. Only next time I won't burn my finger with the hot flour mixture - ouch, nice big water blister! :(
