Iced Pumpkin Cookies

Fabulous. Per other reviewers, 1 C white sugar and 1/2 C brown. Also used applesauce instead of butter (diary allergy in the family). They tasted like pumpkin spice muffin tops! My bible study gobbled them right up.

Baked Honey Mustard Chicken

Went with other reviewers and halved the paprika. Also used half Dijon mustard and half yellow mustard. Easy to throw together and was gobbled up by all 5 kids and the picky brother-in-law.

Penne with Chicken and Asparagus

Delicious! Light and filling at the same time! Used vegetable broth rather than chicken (what I had) and added a red bell pepper cut up into 1 inch chunks for the last couple minutes of the steaming. Looking forward to having it cold for lunch tomorrow!

Asparagus Parmesan

Used the suggestion of a previous reviewer. Sprayed down a rimmed cookie sheet with some PAM, rolled the asparagus around in it then seasoned with salt, pepper and a little garlic powder. Baked in a 450 degree oven for 5-7 minutes. Then sprinkled with the parmesan cheese. Deee-licious!

Party Pinwheels

Delicious and so easy! Made a whole bunch for a party and they just vanished off the plate! Really simple to change up to suit your tastes as well. Made a couple with ham, bell peppers and tomato and then a few as written. Both were delicious.

Red Velvet Cake

Made cupcakes from this recipe. They were gone so fast I didn't even get one. Had one person come up to me and say "this is the best thing I've ever had in my mouth" - and an uncle of mine (who's favorite cake is red velvet apparently) said they were absolutely fantastic. The frosting is so worth the effort - just melts in your mouth, perfect topper to the cake.

Mom's Chicken Cacciatore

Absolutely fantastic! Used red wine instead of white and chicken breasts (personal preference). My husband could not stop talking about how good this was! Great as leftovers too - the sauce is even better the next day.

Chicken-Fried Chops

Very good and simple. Added a couple cups of sliced fresh mushrooms which gave the sauce a nice flavor. Meat was falling off the bone. Will probably use boneless pork chops in the future though - just a personal preference.

Baked Oatmeal II

I've now made this recipe twice - the first time I followed the instructions exactly. It came out fairly loose, like granola but soft. It was delicious but a little difficult to eat. I was looking for something my husband could take to work in the morning on the run. So, I made the recipe again with the following changes: I used quick oats (rather than old fashioned rolled oats) and replaced the butter with applesauce. PERFECT! About the consistency of a soft cookie - very easy to cut into bars and pack for breakfasts! Also, cutting the butter made each bar 100+ calories lighter and eliminated 10 grams of fat from each. Oh, and the recipe serves 8-10...not 4.

Banana Banana Bread

World's Best Lasagna

This recipe lives up to it's name - it is the best lasagna I've ever had. So rich and delicious. I soak my noodles in hot water for 30 minutes rather than boiling them. They still are perfectly tender once baked in the lasagna and are much easier to handle when putting the casserole together.

Curried Chicken Tea Sandwiches

The flavor of the chicken was very unique. It was just ok for me, but my husband LOVED it! I made it a day ahead to let the flavors blend nicely and served open faced on mini-tea-sandwich bread.
