Wife for 20 years, three gorgeous children (I'm not exaggerating!), a darling dog, numerous fish and a Sabine Map turtle. I came from a fairly large family, where my parents regularly made do with little and taught me to do likewise. Compulsive reader and writer.
My favorite things to cook
I like baking, but I'm still looking for perfect recipes--not satisfied with 90 percent of bread machine recipes! I love roasting, and I love crock-pots-- it's perfect: dump stuff in a pot and leave it alone all day!

Fudge. Yeah. Definitely fudge.

I make the most fabulous pot roast.
My cooking tragedies
When my pressure cooker blew its rubber valve. Still finding splatter from that after five years. And once I made lemon-garlic chicken in the crock-pot, but that stuff was nasty.

Apple Butter Pork Loin
We loved it. I got a pork roast on sale, and after reading the reviews of this recipe decided to use it here rather than pulled pork--again. Made it as directed, no changes, and was very satisfied. No leftovers, and several "please make it again"s from the picky eaters.

Butter Beef
I liked it--mostly because it tastes like my mother's pot roast, which is comfort food. I used 2 packets of soup mix instead of one, and thickened the juices at the end with flour/water, but the family liked it best as sandwiches the next day--with the thickened sauce, when it was cold it stuck together really well. I'd like to add something to it, but I don't quite know what. My husband found the taste a little dull.

West African Chicken Stew
I too was happy to find this recipe. Long-time friends of ours were missionaries in Cameroon (I think), and served African stew to us one Friday evening. My husband loved it! That was many years ago, and he says this version doesn't quite match his memory, but he liked it anyway. Not sure what's different--I remember discovering the peanut butter, but I was more fascinated by the bananas with mayonnaise and chopped peanuts that were served as a side dish. It totally distracted me. Anyway, we love this dish, and I'm taking it tonight to the church potluck, where other former African missionaries and a few African exchange students will be eating. Wish me luck!
