Fluffy Pancakes
I made these twice the first time was a flop because I figured I knew how to make pancakes and therefore dumped all the ingredients into a bowl. Kids loved them - I thought they were gross. Second time I followed the directions to a T and they were perfection. cooked on a gridde at about 375. The batter is very thick so you can't really pour it. I used a 1/4 measureing cup and used the back of it to spread the batter. Once it begins to buble you can flip them and they wil immediately fluff up like an air mattress being filed with air. riginaly I hesitated using the recipe because it called for vinegar and i thought that was a bit weird for pancakes but figured it got such great reviews I'll give it a shot. Recipe has a few extra steps not usually found in your typical pancake recipe but well worth the effort. They were delici,ous light, fluffy - just perfect!
