My Mint Chocolate Cheesecake with Whipped Cream topping
About this Cook
I've been cooking since I learned in Home Ec. in 6th grade, so 12/13 or so... I've tried to cook just about every american food there is, and a few german, italian, and french cuisines, they've all come out great and have had requests for repeats.
My favorite things to cook
Chicken Cordon Bleu, Cheesecake, Boston Creme Pie, and German Potato Salad.
My favorite family cooking traditions
We really don't have any anymore, too many branches on the tree to do a traditional Thanksgiving or Christmas Dinner anymore.
My cooking triumphs
My Cheesecakes and my Pumpkin Pies, I used to sell them to coworkers and their friends around the holidays.
My cooking tragedies
the very first time I made German Potato Salad, when I was 14, the recipe called for three times the right amount of Vinegar and none of us thought anything of it when we were mixing ingredients, and then we tasted it... and spent an hour trying to figure out how to cut the vinegar in the existing salad without tripling the recipe...

Kim's Eggnog Cheesecake
I made this Cheesecake today just because and WOW, Phenomenal Cheesecake, I bumped up the recipe to 15 servings because I was using a 10" Springform instead of a 9", I reduced the butter in the crust to 3T, and added a little of the eggnog to the crust mixture. I also added about 3T of Southern Comfort to the recipe as my family loves Eggnog and SoCo. I baked it at 275, for 2:45, and cooled it in the oven for about 2:30, and then stuck it in the fridge. DELICIOUS, I'll be making it again SOON.

Basic Cheesecake
This was exactly what I was looking for, I stirred in about 3/4 of a bag of the Andes candy pieces, and garnished it with the Easy Whipped Cream recipe from this site and the rest of the mints. Delicious!
