Morning Glory Muffins I

Delicious! Used applesauce instead of apple butter and half a Fuji apple. Very good! The topping was the best part!

Tofu Parmigiana

This was terrible! I used extra firm tofu but it was still just spaghetti with mush. You could never have guessed the tofu was breaded or mistaken it for eggplant. Sorry but I won't be making this one again!

Tofu Lasagna

Really, really good! My only suggestion is an extra layer or two of marinara sauce because there is a lack of tomato taste. A sprinkling of Parmesan cheese also adds some zip. Wonderful texture though!
