About this Cook
I have been married to my hubby for 3 years. Our daughter, Kyah, turned 2 in June 2008. I'm a professional photographer. I like to scrapbook and cook. I am currently in college and I started a food pantry at my church recently.
My favorite things to cook
Anything that makes other people smile. I love my crockpot, really like to decorate cakes, and I enjoy baking lots!
My favorite family cooking traditions
On Halloween, we all gather to make hot apple cider in the crock pot and toasted pumpkin seeds. On Christmas morning, I get up early, before anyone else, and make home made muffins for everyone while we open gifts from Santa. On birthdays, the birthday person gets to choose what meal they would like.
My cooking triumphs
I made home made peeps last year for Easter brunch at church for over 300 people! That was alot of peeps!
My cooking tragedies
I caught my oven on fire about 2 years ago and had to call the fire department to put it out.

Roasted Chickpeas
I love these! I keep them in a tupperware on my counter at all times! After my gastric bypass surgery, I was needing something crunchy like a potato chip but can't have fats and sugars. I also need alot of protein. These have been a great subtitute for chips, pretzels and some of my other unheathy snacks. I also made several batches in different flavors... cinnamon & splenda, cajun (I used Tony's cajun seasoning), curry, and so on! So good!

Avocado and Tuna Tapas
The tuna salad mixture is so good! I didn't have green onion, so I substituted finely chopped vidaila onion instead and it's still fabulous! I never thought to use basalmic vinegar and the avocado provides the perfect balance! This is so good and will become a regular lunchtime staple! Even after my gastric bypass, when my food choices are limited and I've developed aversions to certain foods, this is a perfect little meal for me!

Boiled Custard I
This really is fantastic! It's got that scalded milk, caramelized sugar flavor. It's so yummy. It made a pretty thick film on top while cooling, so I had to run it through a sieve, but still, YUMMY!! Be sure to temper the eggs first and stir it constantly, or you'll probably get scrambled eggs.
