About this Cook
After decades in the workforce full time, I have the fortunate opportunity to work less and play more. I am growing to love cooking. I used to be a chore I dreaded or avoided, after long 10-12 hour work days. Now I find it a pleasure and a challenge...especially to find or alter recipes to a lower fat version.

I love to bake breads and cookies. My step daughter is becoming a pastry chef and I hope to learn a lot from her.

Family pot lucks are the BEST! I love to share my favorites with others and sample their creations.
My cooking triumphs
There isn't really one thing I can pinpoint as a triumph. I guess just the day to day meal preparation for me and my husband is my greatest triumph. He is so appreciative. It is very satisfying in a simple, but meaningful way.
My cooking tragedies
Never ever will I use a food processor to make mashed potatoes again! The good ol'fashion masher is the ticket!

Simple Baked Apples
Great recipe! I used another reviewer's idea and put the flour and spices in a zip lock bag then coated the apples evenly before transferring to the mini crock pot. I made mine "weight watchers friendly" by substituting half of the white sugar with 1/4 cup granulated Splenda and 1/4 cup brown sugar. A half cup serving = 2 points. Tastes great...like apple pie filling...yummy! It makes great addition to oatmeal!

Awesome Slow Cooker Pot Roast
I used beef broth from bullion and reduced sodium cr. of mushroom soup. It came out too saltly, but my hubby loved it. I will try this again with low sodium beef broth. It went well with baked potato and "easy home style green beans" from this site (also salty for my tastes.) I give it 5 stars for ease of preparation (yay!) and 4 stars for taste. Overall, a good base recipe from which to experiment.
