Chicken Pesto Paninis
I grilled the onion and pepper first to soften them a bit. I used thick slices of a sourdough boule (buttered) and grilled it on the Foreman grill and they were fabulous. I made these to use leftover pesto we had from making pesto pizza. I would do it again anytime.

Mexican Bean Pie
For my tastes, this recipe was pretty bland. I did give it a second chance and this time I added another 1/2 Tbls. chili powder, a chopped onion, and, as another review suggested, layered salsa in the pie. It was much better, but still not too flavorful. I probably won't make it again, but it is good for people who like mild food or for young children.

Mexican Chicken I
This is delicious and so incredibly easy! As others suggested, I put the beans in with the mixture and they came out great. I added onion to make it like a fajita chicken and served with rice and tortillas. I baked 4 large breasts for 1 hour at 375 degrees and that was sufficient. I have also halved the spices and salsa for the children I nanny (who are picky eaters) and it was a big hit with them. This will definitely be one of my regulars.
