Penne with Asparagus and Mushrooms

This recipe was great and I made some alterations. I used whole wheat penne pasta and a bottle of alfredo sauce in place of the cream. I also cut the olive oil to about 2 tablespoons. It was just perfect!

Vegan Brownies

Very delicious. I followed the other suggestions for making a half-batch. I added white chocolate chips(not vegan) and half of a chopped up dark chocolate candy bar. I also sprinkled pecans and ground flax on top before baking.

Tomato Zucchini Casserole

This was easy and delicious. I omitted the breadcrumbs because I did not have any in the house. I used beefsteak tomatoes instead of roma and I used only 1/2 cup of parmesean and mozarell each. I also omitted the butter, but it still tasted great!

Very delicious. I used 1 tbsp of margarine and 1 tbsp of olive oil and that was enough. My husband said it was the best asparagus I have ever made.

Clone of a Cinnabon

Extremely delicious and relatively easy. I did not use a bread machine. I just let the dough rise for 1 hour and then followed the directions from there one. I placed it in the fridge overnight, let it rise for 20 minutes and then baked the rolls. They were great!

Jay's Signature Pizza Crust

This was a great success. I added garlic powder, italian herbs, and parmesean cheese to the pizza dough. I made one pizza and I used the other half to make "Pizza Hut"-like breadstick with garlic butter, italian herbs and parmesean cheese. For the sauce I used spaghetti sauce. I also substituted a cup of wheat flour. Like many other, I had to add a lot of flour to reduce the stickiness.

Sour Cream Chicken Enchiladas

I changed a few things, it was a good start though. I used a whole tub of sour cream and I mixed in green onions and 3 adobo chiles. I used 2 chicken breasts that I seasoned with seasoning salt and garlic powder. Then I added the canned green chiles, 2 cans of diced tomatoes, cumin, and 2 cans of black beans. I let that simmer for 20 minutes. I also replaced the flour tortillas with corn. It turned out delicious!

Penne with Chicken and Pesto

This was easy and delicious. I substituted fat free half and half for the the heavy cream. I added whole wheat flour to thicken it up. I used a homemade pesto recipe from "The Joy of Cooking." I also added chopped spinach, sundried tomatoes, and 1 can of drained diced tomatoes.
