The Best Vegetarian Chili in the World

Very good Chili!! I pretty much followed the recipe word for word except I used Tastefully Simples's "Wahoo Chili" instead of chili powder since I was out of the later. I used 2 large seeded Jalapeños and it had plenty of kick. my fire eating Hubbie usually douses his chili with Franks Redhot but he didn't have to with this. It is a really nice sized recipe which, for me, made plenty for leftovers and 2 batches to go in the freezer for later. I will definitely make this again.

Addictive Sweet Potato Burritos

I was hesitant to make these b/c the recipe calls for an interesting blend of ingredients (soy sauce and yellow mustard in a burrito??). however, I am glad I tried it. The bean mixture is actually VERY good. I think I went a little heavy on the sweet potato b/c mine turned out a tad too sweet to be GREAT but they are good, especially when topped with salsa and sour cream. I just made mine and haven't frozen or reheated any yet so I can't comment on that but if they are as easy to freeze and reheat as the other reviewers say, this is a terribly EASY make ahead meal for those times you are short on time. I think I will try this recipe again sometime only I will go a bit easier on the sweet potatoes and heavier on the bean mixture (I had a LOT of the bean mixture left over so I'm sure I didn't use enough in the burritos. I'll most likely top the burritos with the extra when I reheat them tomorrow.) If I could,I would have given this a 3.5 star rating b/c it is better than average but unfortunately that is not an option and I have to err on the side of 3 due to the slight over sweetness.

Rhubarb Cake I

DELISH! wonderful coffee cake! I pretty much doubled the rhubarb and I am so glad I did. I am already planning when I can make this again!

Black Bean, Corn, and Tomato Salad with Feta Cheese

This was good although I wasn't amazed by it or anything. I wish it was a tad spicier so I'll prob add an extra jalapeño if I make it again. This is just the type of dish that would be great to take to a pot luck or a cook out.

Fresh Salsa

This salsa was OK but not my favorite. This is more of a garden salsa than a spicy, vinegar salsa. I did make some changes though, so that could be the reason I wasn't a big fan. I was lazy the day I made it so I just tossed everything in a food processor and blended. Obviously the salsa turned out more thin than chunky by doing it that way. The salsa itself really didn't have any pizazz for me but I had 2 avocados I had to use up so I took half the recipe and bended it together with the avocados to make a sorta guacamole and now that was GOOOOD! I had to add a bit more salt but once I turned it into Guac, I couldn't stop eating it. I ran out of chips and was temped to just eat it with a spoon. I will use this as a "base" for guacamole again for sure and I may try making it again as written to see if it was chunkier if I'd like it better.

This was good. Tasted a bit like apple crisp. would have been even better with french vanilla ice cream. A very easy week night dissert.

Hot and Spicy Tofu

If I could give this 4.25 stars I would but since I can't I HAVE to err on the side of 5. This was so easy to toss toghether and it was DELISH! I followed the recipe pretty much to the letter except...I used 2 chili peppers, I marinated the tofu in soy sauce for a couple hours prior to cooking, and I adjusted the cookig times a bit. The only things I would do different is a.) make sure I serve it over rice next time (I forgot the rice this time), and b.) I'll scale back the white viniger just a tad. Mine had really nice heat without being TOO spicy so if you can take the heat, use 2 chili's!! All in all, I loved this meal and because of its ease, it will for sure be in my weekly rotations :)

Rhubarb and Strawberry Pie

If I could give this 10 stars I would. It turned out wonderful. I followed the recipe to the letter only I used a Pillsbury pre-made crust as I was short on time. I let it sit overnight before I cut it and it was not runny at all. My husband had more for breakfast because he couldn't wait till afer dinner :) This is a pie I will make over and over again.

Rhubarb Strawberry Jam

I am very pleased with the results I got ith this jam. I only used 4 cups of rhubarb and 2 1/3 cups of sugar. I added a cup of strawberries at the cooking phase and it turned out beautifully. I really think that if I had added the other 2/3 cups of sugar this would have been too sweet but as is, its wonderful. My only mistake is I think I didn't chop my rhubarb small enough so next time I will use slightly smaller chuncks.

Fresh Rhubarb Pie

Wonderful pie and it could not be easier to make. I just bought a house and inherited 3 large rhubarb plants. This was my first attempt at cooking with rhubarb and it turned out superb. I followed the recipe to the letter. will definitely make again and again!

Grilled Salmon with Habanero-Lime Butter

Very good. I couldn't find habanero peppers so I used jalapinos and there really wasnt any heat to it which was a bit of a let down. Besides that I thought it was very good and I'm sure I'll make it again!

I thought this was really yummy and easy to make. I used the no boil noodles, I just soaked them in hot water for about 10 min to get them soft.
