About this Cook
My Husband and I just made a big move to Chicago. I'm a small town Ohio gal so it's taken a lot of getting used to. I am a newbie cook pretty much. Before now my idea of cooking was chicken on the George Foreman and microwaved canned veggies. I don't always do a great job but I'm trying and I guess that is the most important part.
My favorite things to cook
I really don't have a "favorite thing" to cook. I am working on getting my personal training certificate through NESTA and I'm an avid excersizer so I like to find the healthiest ways to make the family favorites. I lost over 75 pounds through diet and excersize so I think it is very important to eat healthy but eat GOOD as well. I'm finding that you can pretty much make any of thew stick-to-your-ribs comfort foods that we all crave in a healthier way without giving up the taste and overall enjoyment of eating.
My favorite family cooking traditions
Don't really have any yet however my husband and I think it is very important to eat dinner as a family as often as you can. We do eat our meals in front of the tube from time to time but we usually try to sit down together, no distractions, and really enjoy the meal and each others company.
My cooking triumphs
Haven't really had many unless you count that I am actully cooking without the George Foreman now. I'm trying new things and learning more every meal so I guess that is a triumph in itself.
My cooking tragedies
HAHAHA!! Well, long story short, I made the WORST fudge on the planet once. I was pouring it into the dish to cool and it, very suddenly, got rock solid! I ACTUALLY had to chisel out my spoon from the pot. As a joke my sister tossed the rock fudge covered spoon at the garage trying to knock off the fudge but it chipped the bricks instead.

The Best Vegetarian Chili in the World
Very good Chili!! I pretty much followed the recipe word for word except I used Tastefully Simples's "Wahoo Chili" instead of chili powder since I was out of the later. I used 2 large seeded JalapeƱos and it had plenty of kick. my fire eating Hubbie usually douses his chili with Franks Redhot but he didn't have to with this. It is a really nice sized recipe which, for me, made plenty for leftovers and 2 batches to go in the freezer for later. I will definitely make this again.

Addictive Sweet Potato Burritos
I was hesitant to make these b/c the recipe calls for an interesting blend of ingredients (soy sauce and yellow mustard in a burrito??). however, I am glad I tried it. The bean mixture is actually VERY good. I think I went a little heavy on the sweet potato b/c mine turned out a tad too sweet to be GREAT but they are good, especially when topped with salsa and sour cream. I just made mine and haven't frozen or reheated any yet so I can't comment on that but if they are as easy to freeze and reheat as the other reviewers say, this is a terribly EASY make ahead meal for those times you are short on time. I think I will try this recipe again sometime only I will go a bit easier on the sweet potatoes and heavier on the bean mixture (I had a LOT of the bean mixture left over so I'm sure I didn't use enough in the burritos. I'll most likely top the burritos with the extra when I reheat them tomorrow.) If I could,I would have given this a 3.5 star rating b/c it is better than average but unfortunately that is not an option and I have to err on the side of 3 due to the slight over sweetness.

Rhubarb Cake I
DELISH! wonderful coffee cake! I pretty much doubled the rhubarb and I am so glad I did. I am already planning when I can make this again!
