Cranberry Orange Loaf

I thought this bread was yummy. However, I found it to be a little dry. I made mini loaves instead of 1 large loaf. When I give them out as gifts I may add some simple syrup to them to add moisture, as well as a simple glaze over top for presentation. I would make this bread again. :)

Salmon Cakes II

I did make some changes. Instead of using bread crumbs, I used sea salt and pepper croutons and some original flavor baked crackers. (You can see the crackers in the picture.) I used sweet and sour sauce with a sprinkle of red pepper flakes. I skipped out on the salt and pepper since the croutons had that already. I topped the salmon cakes with sweet and sour sauce and served them with the baked crackers. I would make this again.

Scrambled Egg and Pepperoni Submarine Sandwich

I used garlic and herb sub buns. I did toast them in the pan before frying the pepperoni and eggs. I used medium cheddar cheese instead of American. I thought this sandwich was all right, but felt it was missing something..

Easy Sugar Cookies

I followed the recipe exactly and my cookies came out flat. I added more flour and finally got cookies that didn't collapse when I took them out of the oven. I added 1/2 cup more flour. I would make these again. :)

Baked Dijon Salmon

This recipe wasn't bad. My hubby wouldn't even try it. My daughter didn't eat any either. I was the only one to eat the fish. I thought it was better than recipes that call for the fish to be baked with lemon juice. If I made it again, I'd try marinating it in the honey mixture. The pecans were a nice addition. I didn't notice the taste of the parsley. I didn't think salt and pepper were necessary, so I didn't use either one. I would attempt this recipe again.

Melt In Your Mouth Blueberry Cake

I have about 2 pounds of blueberries sitting in the freezer and I had no idea what to do with them, until I came across this recipe. The only change I made was the glaze on top. 1/4 cup of powder sugar, 1/2 teaspoon of milk, stir and drizzle on top of the cake. This cake is so goooooooooooood! It makes just enough. I can't wait to make another and share with more family and friends! :)

Cherry Tomato Salad

I used grape tomatoes. I didn't have any pine nuts, so I used pumpkin seeds. The flavor was light and tasty. My 18 month old loved this salad and so did I. :)

Disappearing Marshmallow Brownies

I didn't have any butterscotch chips. I thought about using butterscotch pudding, but in the end I skipped it. I added the margarine to the brown sugar and went from there. I added about an 1/8 cup of unsweetened, shredded coconut. My brownies were done at 25 minutes. I got a light, fluffy, cake like brownie. It wasn't too rich either. Just right. I would make these again.

Leftover Chicken Croquettes

I added spices. I used 1 cup of chopped rotisserie chicken (I cooked), 1/2 teaspoon of garlic powder, 1/4 teaspoon onion powder, 1/2 teaspoon dried parsley, 1/4 cup of breadcrumbs and 1 egg. I also added a dash of salt and pepper. I shaped them into 2 patties and cooked them on medium heat with a lid over them, flipping them once. I skipped the white sauce, and served them with marble cheddar cheese. I didn't find them bland or dry.

Brown Sugar Meatloaf

The first time I made this I added onion soup mix. It was good. ~~~~ This time around I added a half package of onion soup, and a half package of stove top stuffing mix instead of the crackers. Still yummy and I'll keep making this recipe every time I want meatloaf for dinner.

The Ultimate Chocolate Chip Cookie

I could taste the baking soda. I hate that. So, I didn't have any eggs. I made the cookies anyway, and they were good. What do eggs provide? I did pick up some eggs. I divided the dough in half and added 1 egg to 1 half of the dough. I cooked 6 cookies. I found that the cookies without the eggs weren't flat in appearance. The cookies with the egg went flat. I felt that I could taste the baking soda more in the batch with egg, than the batch without. I may leave the egg out all the time! I won't make these cookies again. I will try making another recipe, only without the eggs.

Tuna Noodle Casserole III

I used Lasagna noodles because they're all I had on hand. I broke them up a bit. For the first layer I added garlic and dill cheese, and on the second layer I used marble cheddar cheese. I added corn to the tuna mixture. Overall I thought it was a quick and easy lunch. I liked it. My little one ate some of hers, so that's a plus. I would definitely make this again.

Ranch Burgers

I used prepared ranch dressing because that's what I had on hand. I also added a little bit of onion soup mix. We grilled them on the BBQ and added cheese. My husband added BBQ sauce to burger, and I put coleslaw on mine. That was good!

Farmhouse Barbecue Muffins

I made my own biscuits with pancake mix and milk. We were thinking that these would be good with taco mix instead of barbecue sauce. I wouldn't make this recipe again.

Camper's Breakfast Hash

I used yellow peppers, and omitted the sausage. I also made my own hash browns, rather than using store bought. Just shred a potato with a cheese grater, and toss it in the pan. I drizzled a little bit of light syrup on top. It would definitely make this out camping.

Apple Breakfast Bread

This was a great morning snack! I used whole wheat flour. I think the apples I used were Gala's. If I make this again, I'll use Granny Smith. I didn't change anything else about the recipe. It was good right out of oven.

Omelet in a Bag

Wow, what an easy omelet! I used a cheapo zipper bag without problems. I added the eggs, marble cheddar cheese, dill and garlic cheese, and dried onions. I let it boil for around 10 minutes on medium high heat. I will be making these when we go camping in July! I know everyone will love having their own customized omelets!

This wasn't the best burger I've had. But wasn't the worst either. It was just okay. I think it needed salt and pepper. I used mozzarella cheese instead of cheddar. I put BBQ as a condiment and a slice of mozzarella cheese on top.

Honey Mustard Sauce

I used low fat mayo, store brand Dijon mustard and alfalfa honey. The honey mustard reminds me of the honey mustard sauce you can get at Arby's with their chicken strips. I made a big batch for next time I make chicken strips.
