This has been a family favorite for years! The first time I made it, everyone cringed at the thought of a "pumpkin" cheesecake! Now I cannot attend a family Thanksgiving without bringing this one! I've also cooked them in individual cupcake holders to take to work, this way its already portioned out!! Needless to say it's one of those timeless cheesecakes that never gets old!! ENJOY!!

This was tasty, I seem to have a problem getting my eggplant tender though. I followed the recipe, but our eggplant was still pretty tough... It was tasty!
